Good Morning! How awesome that you got to see your friend during lunch. I am sleepy this morning and it really feels like it should be Thursday.

QOTD: I have driven cross country (Connecticut/California)vice versa three times about 19/20 years ago. I didn't mind it then but I don't think I would enjoy it much now. We have talked about taking a road trip to Seattle at some point but I don't know if we ever will.

Accountability: I caved last night and ate a protein bar and banana. I won't do that again tonight.

Time since surgery: 3 years 2 months

B: SF latte, eggbeaters with roasted red pepper, ½ an orange and 2 turkey sausage links

L: Albacore lettuce wraps and baby carrots

S: Pork rinds, salami, mixed nuts and a SF popsicle when I get home

D: Spaghetti squash casserole

ES: Homemade Greek yogurt with canned pumpkin and ¼ cup fiber cereal

E: 1 hour stair-climber this morning and 40 mins of elliptical at lunch

V/W: On track

Totals: Cals:1165 Protein:111 Carbs:91(a little on the high side since I got my coffee at Starbucks this morning instead of using my Fairlife milk) Fat:45

So we had snow in the panhandle of OK this morning too! Ugh, I hate that this state gets ALL the weather extremes. I'm NOT ready for anything resembling snow - yet it was 40F out this morning and a light mist...

Funny on the hotel eggs... I think they ALL use those powered eggs... they are edible, but just barely... but usually the bacon is good! Not so much the sausage though unless you're at a nicer hotel that actually cooks good things!

QOTD: I've driven from Houston to Palm Dessert, Houston to Chicago, Atlanta to Houston... all long road trips, but not as long as yours! I routinely used to do Atlanta to Naples FL with two kids under the age of 2. We got really good at it though, and now my kids travel so well! (well, they're not really kids anymore, are they?!) We want to get an RV in the next few years and start to road travel once the kids are grown. I want a bus, and he wants a 5th wheel... we're going to have to find a compromise on that one (meaning a bus, NOT a 5th wheel!)

Accountability: I did great yesterday. Ate on plan, no extra snacks - not even all of my planned snacks. I love it when it feels 'easy'. Unfortunately that isn't always the case.

Weight this morning 137.2/ maintenance/ almost 18 months out

B: brisket/eggs/salsa/cheese bowl 4 ounces

S: pepperoni/cheese if I need it

L: I have several things still in the fridge... chicken/mushroom bowl and manwich made with roast bowl. Both measure out to 3.5-4 ounces.

S: Cottage cheese/canadian bacon if I need it

D: Not sure, but protein forward (last night was more of the leftover brisket and cottage cheese)

It was totally me just trying to use up the leftover brisket, but it really turned out good! The smokiness of the brisket wasn't overpowering, and it's really filling!

Good Morning Teena and Menu Family!

QOTD: My dad drove himself and me from Nebraska to Los Angeles, California in 1993. I had just found out I was pregnant with Saralisa and was horribly morning (car) sick, her father had decided he didn't want to be involved so I was going to be a single mom and was afraid to tell my dad I was pregnant for fear it would ruin our trip. My dad caught an awful cold and he is very gross to be around when he has a bad cold so it was a pretty miserable trip.

Accountability: Yesterday: Protein - 74, Calories - 1,134, Carbs - 105.

B: prosciutto & mozzarella sticks, light & fit Greek yogurt

L: stuffed peppers, light & fit Greek yogurt

D: Not sure yet, going to grocery store later on

S: prosciutto & mozzarella sticks, light & fit Greek yogurt, Atkin's peanut butter cups

Today is wednesday!!

Weight-156.4 lbs! It is going the right way!

Fasting BG= 95 (it is staying in the right spot)!

The battle of the bulge and hypoglycemia continues!

Pre-B: 3 cups coffee with a total of 4 TBL 1/2 & 1/2

B1: 1/2 cup canned in water peaches, 1 HB egg, 1/4 cup Strawberries-n-cream steel cut oats made in my Instant pot

B2: Same as B1 except omit peaches and substitute in 1/2 of a banana

L1: 2 oz roast beef, 2 small frozen perogies (total calories = 130...my starch), 1/4 of a banana and 1/2 cup garlic sauteed spinach

(NOte- I spent $18.00 in spinach to have 1.25 days worth of nonstarch vegetables...I am eating about 2 cups of nonstarch veggies per day. NOT COST EFFECTIVE ON THE SPINACH from a normal grocery store. May have to try BJs or an Asian market).

L2: Repeat of L1

D1: 2oz of enchilada bake (calling it a meat), 1/4 cup refried beans (since the bake has some tortilla in it), 1/4 banana, and 1/2 sauteed garlic.

D2: Repeat D1

Before bed snack-2 oz pepperoni.
