Good Morning Teena and Menu Family!

QOTD: We don't really have an Fall traditions, other than putting candy out for the trick-or-treaters. (I set the candy out in a bowl with a sign to take 2 pieces because my dogs go nuts when people ring the doorbell). This year we went to a haunted corn maze in the woods full of elaborate animatronic displays and actors who jumped out at you. They even had a car that suddenly appeared flashing it's headlights and honking it's horn as if it was about to hit us! It was a lot of fun and I hope we go to it again next year.

The fall is definitely here in the NW..temperatures are in the 50's and 60's and a little rainy... I'm doing CAMAW this week.

Coffee, cream, Miramax, vitamins, and 1/2 pp

B 1 hb egg, 1 bacon

L 4 oz. Chicken thigh

D 4 oz. Shrimp...then wait half hour to finish pp

Today I find out if I need to get my replacement knee 'manipulated'. I am learning so much with this knee that the other one should be a breeze! All is good and I wish everyone success on their goals this week.... have a great day

Good morning :)

I'm so ready for this challenge week!! I may need to pick up some more meaty options as I felt limited this morning when packing my food. We had a fairly relaxing weekend so that was nice. It is very cold this morning. My windshield needed to be scraped.

QOTD: usually the fall means Thanksgiving and fall fairs. Oktoberfest is really popular in this area too. I haven't gone for several years though.

Breakfast - possibly a protein shake or egg

Snack - ham

Lunch - turkey sausage

Snack - Greek yogurt

Snack - pepperoni and cheese

Dinner - probably beef

Snack - protein shake if needed

Water, vits, and restoralax.

Good morning all and happy Monday! Busy week lots of meetings this week.. Hoping I can stick with CAMAW while traveling to other offices but I'm going to give it all I have.... It was a little nippy this morning had to break out a warmer coat.

QOTD: When my daughter was home it was going shopping for her Halloween costume this year I started doing that with my nieces. We never carved pumpkins. I should say we did it once and Emily hated it could not stand the feeling of pumpkin innards, sometimes we would paint them but it was not really a tradition. A good family friend of ours owns a farm stand and orchard so when ever we want apples we stop and grab them so we have never made apple picking an event. They do have an annual open house to thank their customers and from when Emily was in JR high through graduation she provided the musical entertainment so that was always nice kind of miss those times. They are sweet every year they send her a text and ask her if she wants to have a homecoming and come back and play.

Love fall!!! We live about 30 min from apple/peach orchards so we sometimes will stop in and check it out. The have the most amazing fried pies I LOVED, apple, peach, chocolate, sweet potato. OMG I can't go there. We also have corn mazes here that everyone from the 'city' comes up to see. This weekend is 'gold rush weekend in my town so it will be super crowded.

I will mostly be on the challenge with you, cooked up a ton of, you guessed it- gizzards and will be eating this and veggies for the next several days.

Made amazing broiled salmon last night with homemade coleslaw. It was so good. DH had grits with two cheese sauce.

What's your salmon recipe? I had my BF grill a giant salmon on Saturday - I put a bit of olive oil and salt and pepper on both sides. He starts skin side down, then flips it, peels the skin and puts a mixture of brown sugar/dijon mustard on the upper side until it's done. It's a hit with guests, but due to the sugar, I am looking for other delicious recipes. I get tired of the old "garlic and lemon" flavor that I do on white fish literally every week. All recipes welcome!

I did Himalayan salt, pepper, then a fish seasoning. Used broil setting on oven. Ordered from Schwan's for the first time.

My go-to with salmon is super simple - I bake it in a glass oven pan that has a nice thick drizzle of olive oil, putting it down open side first then flipping it so it's skin side down (usually I skin it first) so that both sides are coated in olive oil. Then I just sprinkle Old Bay seasoning on the side facing up and bake it until it's warm all the way through but still pretty rare in the middle. When I serve it I a yogurt sauce on the side which is usually Greek yogurt with pureed roasted red pepper and roasted garlic mixed into it. I'll buy "Southwest vegetable dip" if I don't want to make my own yogurt sauce, or if I can find it use a package of southwest ranch seasoning in Greek yogurt.
