As soon as I finish all of the frozen leftovers in my freezer, I'm so making your casserole again... your picture of it on FB reminded me of how yummy it is!

I bought a spaghetti squash and need to make your casserole.

Totally easy and adaptable to what you like...

Roast spaghetti squash (let me know if you need help with that part)

Once squash is roasted, let it cool for about 10 mins.

Scrape "noodles" and place in 13X9 pan (I spray with olive oil first)

top with Alfredo sauce (I use the Walmart brand jar kind), lots of Mozzarella cheese, chicken (any kind you want to cook it-I have used shredded/canned/grilled breast) and this time I added a little crumbled bacon.

Bake at about 425 degrees for about 30 mins ****il cheese is bubbly and melted). I eat it fresh and after a few days freeze into individual size portions and it does well.

Morning Menu Peeps!

I had a good weekend overall, got lots done, and got to see the kids perform their marching band show twice. I did make a poor choice and had about 2.5" of a big bready pretzel Friday night at the game, and that was something my pouch said "Don't do that again!"... didn't get sick, but it sat like a lead weight for hours.

Funny thing (oh how I hate the scale Gods) was that Saturday morning I woke up to an unexpected lowest number on the scale... 135.6. SMH. I hate it when I do something off plan and the scale messes with me like that!

QOTD: I am really liking Charlie Puth's new song "Attention"... I also like Taylor Swift's new song, "Look What You Made me Do", and don't judge, but that Despacito Song that Justin Beieber sings (along with someone else) has a great beat to it. My kids are ashamed to be in the car with me sometimes.

Accountability: Had that pretzel on Friday evening (or part of it), and a small cookie my son baked on Saturday - which I paid for with RH a few hours later. It's interesting to me that the further out I get, the easier it is to throw myself into an RH episode.

Weight this morning 137.0

B: 3.5 ounces of meaty ricotta bake

L: smoked chicken (about 4 ounces, but they are two legs - small pasture chicken legs)

S: Cheese stick and some pepperoni if I need it

D: 4 ounces of shrimp and some broccoli

S: Latte Love!

Hey, Despacito is a great song don't let your kids judgement sway you. Haha ;)

For real though, I love Justin. He's grown a lot as an artist and as a person. Poor kid grew up in the public eye AND being made fun of all the time (granted he's ridiculously wealthy so I'm sure he's not too bent out of shape). But he's genuinely got some good pipes and can play several instruments. So you keep listening with pride lol.

Liz posted an article in the menu thread on Saturday and one point it made was that the weight loss we see today actually happened weeks ago. Then the fat cells fill up with water until they decide to release the water. It was pretty interesting.

Hi everyone! Happy Monday!

I like a wide variety of music from classical and opera through rock and roll. I'm very fond of early music, as well as old English folk songs (all that hey-nonny-nonny stuff), and also really like Native American powwow and ceremonial songs. I don't really have a current favorite.

First: Vanilla Protein drink

B: 2 oz. Turkey

L: 1.7 oz. ham, 0.3 oz. Cheddar

D: 2 oz. chicken thigh

S: either a little Greek yogurt or another protein shake. 2 oz per meal doesn't give me more than 10 grams of protein for each, so more is necessary.

It's almost time for Snowdonia cheeses to make their annual holiday season appearance in the grocery store! They are excellent and worth trying if you are interested:

I tried eating low fat cheese, but find it to be less filling than a small amount (less than 1/3 oz) of full fat cheese. The low fat cheeses are okay, though a bit rubbery, but I am finding that the full fat keep me fuller, longer.
