I just mash up a couple boiled eggs and add about a half cup (maybe less) of regular cottage cheese with a teaspoon or so of pickle relish and a little salt and pepper. I've seen where some folks on here use dill pickles. I add just enough of the cottage cheese to make it the right consistency. Then I add small amounts of toppings such as chopped fresh tomatoes and lettuce. I have a piece of deli meat and cheese on the side but today I am going to try adding tuna to it. Here is a picture before the tuna and toppings. I will eat half today and half tomorrow. I don't put on the toppings until I am ready to eat.

Oh! I've already thought of that! Yumm! I forgot I had put black olives in my cooler yesterday also - they worked out well!. Not too sure about the tuna though. Going to try it again today and see how it sits with pouchy. Hope you have a great day Emmie! Thanks again for the recipe!

QOTD: It's hard to even come up with a specific goal Maybe THAT should BE my goal??? I have hundred things on my "to do" list, that never seem to get done, because they are things for ME...Sound familiar????

Ha ha ha, Gina! I love your comment about "that broccoli stuff" - I make my BF's kids have a fruit or vegetable with every single meal, and they try to barter with me, like "how about if I have 3 broccolis you make brownies"...and although they love me and tell me how much more fun it is when it's not just dad, they also fondly reminisce about "DAD used to give us POP TARTS" or "DAD used to give us DONUTS" lol. I just say, "those must have been some good days! What a great dad!" and then make them broccoli ;)

My kids used to call broccoli 'trees'... OK, so I called them trees, and they would get a kick out of eating 'trees' for a few years...

Hey, it worked.

I used to love Happy meals... they were a great addition to my big mac for my lunch
