What's on your menu today (Thursday) RNYers?

Hello Menu Crew! How is everyone? Muggy and raining here, wish I was still in bed! Hubby and I leave tomorrow to drive to Boston to JB & Grims, we are so excited, I feel like a 5 year old going to Disneyland!
Accountability: stayed on plan, was super tired last night and fell asleep on the couch and missed dinner so I just had cheese strings & raspberries (yes I eat them together, weird I know!) for dinner at 9pm, ugh.
QOTD: Tell me a goal you have for yourself, can be work, personal, school, WLS related or not. I have many goals but one that sticks out is at my step class on Tuesday nights there is a lady that always stands in front of me. She is crazy incredibly fit. She is lovely and nice and super friendly. She goes super high intensity and she is like a blur on the steps she goes so fast. She also does the muscle pump class after and she uses such heavy weights for such a small lady. She has inspired me to go harder at step, lift heavier weighs and push myself harder. At the end of our classes she high five's me and says "see you next Tuesday!" Its my goal to get to her level of fitness one day.
3.8 yrs post op RNY - maintenance
B: lots of decaf with vanilla PP
L: tandoori chicken kabob (take out from work)
S: 2 cheese strings & raspberries
D: half a Costco hotdog with ketchup & mustard
S: 2 cheese strings & raspberries
TOTALS: 897 calories, 102 protein, 22 carbs
V: patches are on (multi, iron, B12, Vit D & Calcium)
L: 120 oz is my usual
E: going to Costco, packing and generally running around like a chicken with my head cut off trying to get stuff ready for vacation!
I may post while away but won't be starting the menu thread. I will be back Tuesday Aug 8th!

Good morning! It is my last workday of the week too (though I'm not on vacation). Each week/day gets more difficult.
QOTD: Which gets to my goal: At this point it is retirement at the end of the year and it can't come soon enough. That and more patience with DH, which I hope will be greatly assisted by not being stressed out from work.
LOL on cheese strings and raspberries. I was craving Emiepie's egg salad (made with cottage cheese), so I had it for dinner last night (seasoned with "Everything but the bagel" spice). Kind of a strang dinner but very filling.
16 months post-op, in maintenance.

I finally tried Emiepie's egg salad made with cottage cheese. I put a teaspoon of pickle relish in, sprinkle a tablespoon of chopped fresh tomato on top and a torn up romaine leaf. It is so good that I have eaten it for lunch everyday this week! Today I brought a packet of tuna to jazz it up a little. I love the suff! Tastes better than with mayo.
