The no gum chewing goes back to lapband days. People would swallow a big enough wad to block up their opening to the stomach and sometimes need surgery to remove it.
My surgeon showed me a photo of one of his patients who was eating soup, swallowed a bayleaf and need surgery to remove it.
Real life begins where your comfort zone ends
I know I look like a cow when I chew gum so I mostly do it in private to keep from eating (especially when WFH). In my 62 years, I have NEVER swallowed my gum (and I've been a regular sugarless gum chewer most of that time).
