We had decided to bake our own cakes for the wedding... I didn't get around to it due to time constraints but I had planned to bake a carrot spice cake for my mom and I (we've both had WLS). It can be sweetened with a bit fruit or Splenda instead of pure sugar - with the base being mostly carrots and more dense I wasn't as worried about the weirdness of not using sugar in the recipe. Or you can leave it a little less sweet. I had planned to frost it with a Greek yogurt and cream cheese frosting sweetened with SF Torani. I found a low sugar carrot spice cake on Pinterest and then just adjusted the recipe a bit.
I love carrot cake so I may try to Pinterest that !! Thank you all for the sugggestions !

Happy upcoming birthday!
I just had mine last week, and my Mom's chocolate fudge cake is so yummy that I didn't want to even try to face the temptation so asked her to please not bake. I made myself a watermelon cake, and it was perfect. Someone here on OH gave me the idea several months ago when I asked what we could have instead of cake and I can't remember who. Whoever you are, thank you!
I just cut a mini seedless watermelon into a cake shape, frosted it with lite cool whip, and decorated with strawberries. Mine was really small because I used a small watermelon, but it was enough for 6 small slices, which was perfect, as there were 5 of us eating it.
I suck at cake decorating, but here is what mine looked like:
