Lettuce and broccoli
I wasn't able to tolerate lettuce or any kind of raw veggie until about 2 years out from RNY. And boy, did I hate veggies prior to surgery - blech!
Now... I'm going through a stage where I can't get enough. I love the taste, and I use them in the afternoons and evenings instead of snaking. That's AFTER my protein, though. I pack these for work every day now... the dressing is Walden Farms calorie/carb/fat free Chipotle or Ranch Mayo - yummy.
Then for dinner I've been stir frying even more with my chicken or turkey - last night I bought yellow neck squash, red & yellow bell peppers, zucchini squash, green and red onion, sugar snap peas, baby carrots... I chop it all up on Mondays and fry/steam them in Pam cooking spray until it's just soft, adding my already cooked meat about half way through.
So, maybe just give it a little more time... if anyone had ever told me that some day I'd be hooked on veggies I would've laughed in their face!
