I use ground pork. Or ground chicken. Both work well.

My recipe calls for ground pork, which I like because my favorite Chinese restaurant makes their egg rolls with ground pork. I found, though, that my recipe didn't call for nearly enough ginger, and didn't have sesame oil, which it DEFINITELY needs, so I added those until it tasted right the next time I made it. Turned out wonderful!
