What's on your Tuesday Menu, RNYers?

Yeah, one of the moms in our homeschool group surprised me when I found out she is several years younger than me. I figured we were about the same age. She has quite a bit of gray, and her hair is dark so it's very visible, I think that's why. On closer look her skin was less wrinkles than mine. Especially mine now. Gobble gobble.

We are home today. My sons therapy was canceled because his therapist is on her honeymoon. I'm hoping to use the time to do some organizing upstairs. We have a loft in this house with built in bookshelves, would make a lovely little library, but it has become a Place To Dump Crap. Anyone else have one of those rooms?

Meals today- 7 months out

breakfast- Apple cinnamon protein oatmeal

Lunch- Leftover pizza spaghetti squash

Snack- popcorn

Dinner- Pork roast, salad

snack- Apple and peanut butter Greek yogurt dip

I made it. Here's the recipe. It makes three good size servings. Not sure how far out you are, but if your portions are still very small you might want to halve this. It makes a pretty pudding-like oatmeal. I prefer kinda more textured oatmeal usually but this was pretty good and it was nice to have all ready in the fridge.

Stire together 3 cups unsweetened vanilla almond milk, 3/4 cup rolled oats, 1 1/2 tbsp chia seeds, dash of salt, 1 1/2 tsp cinnamon, 2 servings vanilla protein powder, 1 1/2 cups chopped apples, and 1 1/2 tsp glucomannan powder (this is a supplement powder I order on amazon and use for lo carb thickening. I've heard you can use unflavored gelatin instead but haven't tried it. Maybe when my glucomannan is out.)

Divide among three serving dishes and chill overnight. Can be eaten warm or cold. Top each serving with 1 tbsp chopped pecans before serving.

329 calories, 14 g fat, 24 carbs, 20 grams protein per serving

Happy Day! Another busy day of prep to be out for my surgery tomorrow. Work work work.

QOTD: My husband is actually 2 months younger than I am. His hair is silver and people have always thought I was much younger. Now that I lost weight it is even more so. I find this amusing as can be. He finds this amusing not at all. LOL

Menu: B: Greek yogurt with granola; L: Beef with cabbage soup; D: Spaghetti meat sauce; S: Blueberries and strawberries; ES: No sugar cho**** cream

Accountability: I think I am a non-smoker...like for real. I rarely even think about it anymore. Weight 127 this morning.

Yep.. that's how not smoking worked for me! I quit in 1983 .. first it hit me that I didn't focus on cigs...then the cig odor( not aroma...but odor) started making me gag... have not smoked since... yaaaaay for you...
