What's on your Monday Menu, RNYers?

Morning!

Glad to hear your folks are still on the mend! All about Eve! Oooh now I need to rewatch that!!

busy week ahead, I have a new person starting at work, which I'm super excited about, but because of how crazy its been, I'm also completely unprepared for.

My in laws arrive Thursday for the Easter weekend. And spring is finally here! I realized that I have practically zero warm weather clothes! Yikes!

Qotd: I'm still a newbie, but my advice would be the advice I was given here: follow the plan. Treat this like a job, and give it your all. Don't rush the stages. Use the break from food to learn new habits, and focus on behavior change! No crackers!! Hahahaha

And mostly, if you do the above, relax, it's gonna happen. You won't be the one person to have surgery and not lose. This isn't like any of the million diets you've tried in the past. And it's so worth the effort.

Menu:

B: premiere protein shake

L: leftover sausage and peppers

S: peppers and hummus

D: I haven't looked in the freezer yet... I'm thinking something with ground beef or ground turkey...

have a great day everyone!

I had to read your advice like 3 times before I realized my mind had just changed "break from food" into "break room food." I was thinking, break room food?! No! Stay away! We don't need donuts!!!!

Good morning all!

I had a good weekend and got things done in my garden, which pleases me. I got 12 broccoli plants and 12 pak choy plants in the ground as well as adding a few strawberries and planting some hostas. I wish I had another day to relax though. Oh well.

JB, glad to hear that your folks are improving and that you are back to a more normal routine. Keep taking good care of yourself.

QOTD: I think I would tell myself to use my support system better. Ask for help with things and not need to be so self-sufficient.

Breakfast: Mushroom egg scramble, turkey bacon

Snack: Fuzzy navel protein shake

Lunch: chicken salad lettuce wrap

Snack: cottage cheese

Dinner:salmon with zoodles

Exercise: 40 minute walk

Hi all! I'm back and swinging this morning! Didn't get back in until almost 10 PM last night from vacation and the 7:00 alarm with a 1 hour difference was NOT FUN this morning.

Back on all proteins, chugging liquids again. I was at 121.6 this morning, so I did gain a few pounds on vacation. There were bavaraian coconut marshmallows involved, and bread and a few bites of desserts. Onward and downward on the scale though! Poop also is all messed up so got to get that back on track the next couple days and moving forward.

Support group tonight so I get to go to ALDI!!! yay

QOTD: hmmmm- I was super focused on getting the weight off thanks to the vets on this board. I would say try to stay on used clothes during your weight loss phase, don't run out to the new stores and sink $$ into clothes you will wear for 1 month max when you are losing. I mostly bought on consignment but a few pieces like pants i did buy at kohls.

Food for today:

HB eggs/ decaf/miralax/yogurt/veggies/crack chicken for dinner I think

Kind of discombobulated from being on vac but will get the food in line :)

Here's the recipe for you, I absolutely love this stuff! At least I did. Over the past couple of months my sleeve says "No way!" to chicken! Hopefully I will start to like it again soon!

Enjoy!

Crock Pot Crack Chicken

Author: Adventures of a Nurse

Ingredients

  • 6 slices cooked bacon
  • 2.75 pounds boneless chicken breast
  • 1 packet ranch seasoning
  • 8oz reduced fat cream cheese
  • ¾ cup low sodium chicken broth or stock
  • ½ tbs corn starch
  • 4oz reduced fat shredded cheddar cheese
  • Instructions
  • Season chicken with black pepper, onion powder and garlic powder. Pour the broth in bottom of crock add the sliced onion to bottom of crock. Place chicken on top of onions. Put cream cheese and ranch dressing powder over the chicken. Put on low for 5 hrs. After 4.5 hrs check temp of chicken should be at least 160 degrees. Remove chicken only and shred or pull. Add corn starch to crock and whisk. Then stir in bacon and shredded cheese and stir. Add Chicken back to crock and stir. Leave on low for 30 mins. and enjoy.

Edited because when I copied and pasted the recipe it got messed up. All set now! :)
