What's on your Wednesday Menu, RNYers?
You can always pound it out thin, season with Italian seasonings and cover with marinara sauce and some cheeses (Parmesan and mozzarella) cover and bake for as long as you can stand (the longer the better if you have it completely covered in the marinara it will kind of boil in that juice and get very tender)... then you can make zoodles to go with it (key to those is to heavily salt after you cut them and then put them in a colander to let the water release before you throw them in a pan with olive oil and garlic). Easy chicken parm without the breading.

I always pound out chicken breast now. For me it's so tender and more pouch friendly that way. I grill it in a cast iron pan or BBQ. My go to seasonings are fresh garlic, salt and pepper w/evoo and lemon. I also add whatever herbs sound good.

Good morning!
I didn't walk into town yesterday but I will today. We got some sideways rain and I just didn't brave it but the sun is shining this morning so I'm looking forward to getting out there. I had a good talk with my sister last night so I'm feeling a little better on the emotional stuff. Work in progress of course.
QOTD I'm envious of all your laid back personalities. My brain is constantly going and I need to stay busy and feel productive. I've been working on letting stuff go and I'm trying to back off on some of the less important details but worrying and overthinking have been life long hobbies.

D- more chicken and goat cheese
S- skyr yogurt w/ protein powder, 1/2 chocolate premier in coffees
Totals 665 cal, 112g protein, 10g carbs

Thanks Amy. My emotional stuff right now isn't directly related to my sister but she let me vent and talk through a few things. I'm just feeling overwhelmed with all that's happening and changing in my life right now and I'm more sensitive to things than I should be. 100% work in progress.

Good morning! It does feel like it should be Thursday! I was thinking that earlier this morning.
QOTD: I am totally a laid back person. I'm also frequently told that I have an old soul. My life's motto is Three little Birds by Bob Marley. 'Don't worry 'bout a thing, ... 'Cause every little thing gonna be alright". I always sang this to my baby boys when they were upset. My boys would sing it to their baby sister when she was upset and it became our family song. I have a tattoo of 3 little birds on my wrist.
