On the milk/dairy side... In my quest for "clean eating" I actually got my own little herd of Nigerian Dwarf dairy goats. The Nigerian Dwarf goat and the Nubian goat both produce a milk that is somewhat sweet, and not at all "goaty". I started with two Nigerian Dwarf does because I only wanted enough milk for my yogurt and maybe coffee cream. When I left the farm I had six does. Why? THEIR MILK WAS LIKE HEAVEN! I digress... reason I posted is that if you can find a goat dairy that uses Nubians (Nigerian Dwarfs are used by individuals as they don't produce at a commercial rate - thus I had six!) you may find you can use it for yogurt and other dairy products with no digestive issues. It still has lactose in it, but the protein structure is much more human friendly.
And if you buy a gallon, you can use half for yogurt and have plenty to make your own fresh goat cheese!!!! super easy and omg so good!

Feeling excited that it is Friday here too! Going to be a great weekend here!!! Get to meet up with Pam and am super excited. Still feeling pretty crappy but the swelling issue seems to be improving some. Doctors have a scope and an echo in store for me so I am just trying to take it easy and wait to find out what they say. Thank you all for your well wishes and checking in on me. Good to know I have my OH family looking out for me.
QOTD: Alton Brown... Good Eats...all the way. The Guy and I just recently discovered the "Good Eats" series and are watching them like mad. So much fun. I feel like a better cook every time I watch one!

Accountability: Smoke free still! My Guy is doing so well at his supportive quit too. He is back sliding here and there but he hasn't brought any home and I am really glad for that! This morning weight was back at 127 from a high last week of 132. The swelling is improving and the scale is moving in response to that. No binges or crackers in the house so all is going well. Keeping on plan and trying not to stress.
PHOTO Friday: Making hummus last night with my Guy. Alton Brown inspired first try at making it. I lightened it up some by trading out 3 tbs of olive oil for 1/2 cup of my homemade Greek yogurt. The recipe called for 4 tbs, I did put in one just to preserve the slickness. The yogurt did a great job though. Tasty tasty!

Good morning everyone!
I had my interview this morning and I left it feeling good about how I presented myself and more excited about it than I expected. It has the potential to be an interesting opportunity in the long term so we'll see if anything comes of it. This morning as I was waiting impatiently to leave and the anxiety was growing I attempted a "confident" selfie to get me in the right frame of mind.
QOTD A year ago I couldn't have named five celebrity chefs, three may have been a push, but since then I've developed quite the thing for cooking shows. Never saw that coming. There is one exception though, years ago there was a show called 'Take Home Chef' with Curtis Stone. A tall, attractive, Australian chef approaches women in the grocery store and offers to come home with them and cook dinner. Ummm... yes please.
