What's on your Tuesday Menu, RNYers?
Hi Grimberry and menu peeps,
It's been a while, but I have been reading when I have had the chance!
I think my whole entire life now is due to my RNY, to be honest. My biggest life change was moving in with my boyfriend and we have his 3 kids around 40% of the time. The 4 of them bring me unimaginable happiness and adventure. And most of what we do would have been impossible at 350 lbs - whether it's making our 10,000 steps a day, me kneeling down to detangle the 7 year old's hair, or just any of our daily activities.
Time since surgery: 3 years, 3 months
B: coffee with creamer; 2 Amylou andouille chicken sausage - found them yesterday at Costco! Yay they are back in stock!
L: Costco rotisserie chicken nachos for the BF, less chips and more cheese for me
D: Something with Costco rotisserie chicken. Either a buffalo chicken cheese bake, or maybe coconut curry soup with veggies and chicken
E: Did cardio yesterday, will do strength training today
V: I am on the patches! God I hope these work for me, they are so easy for me!

Buffalo chicken cheese bake sounds awesome - how do you make it? I know I won't be able to eat if for a while. But I have been gathering recipes to use later on.

Well it's sort of a recipe but I tend to modify things as I go along :) It's meant to be 8 oz of pasta (rotini or penne) but until I got to goal, I didn't eat pasta, and now I eat very little since it fills me up and can sit like a rock. But the sauce is a package of cream cheese, brought to room temp, stirred well with 1/4 cup ranch and 1/4 cup of Frank's hot sauce (the sauce, not the watery kind) and as much chicken as you would like, plus maybe 1 cup of cheddar cheese. It would be great baked, without the pasta, almost as a dip, with green peppers or even low carb crackers :)
Thanks...I think I may be able to modify it some and maybe eat it on spiral zucchini noodles, or maybe spaghetti squash.

I am happy to report again, lol...the scale moved downward (drum roll) 181.6!
Thank you everyone for all the support and advice.
QOTD: My biggest challenge is having lost my Dad in August 2016 to AML cancer. I was his caretaker and the images in my mind of his suffering is so unimaginable! I miss him so much. I can't seem to wrap my mind around this, it's pretty scary. I understand we all must die, but until you really experience it at a personally close level, it's a mind blower! I never, ever thought my Dad would be gone so soon.
MENU:
COFFEE, COFFEE, COFFEE, half and half creamer
BREAKFAST: Eggface's Ricotta bake (1/2) cup measured.
LUNCH: 1 whole large egg, 1 whole large egg white, 1 tablespoon of ricotta cheese, 1/4 cup of 2% shredded mozzerella cheese (measured) and salsa 1/4 cup.
DINNER: TBD
SNACK: 2 small Halos and handful of almonds.
