I just had surgery on the 28th and I know what you mean about the last minute jitters. I ran around the house the last few days before surgery cleaning and sorting and doing all kinds of things just trying to use up my nervous energy. When you can, take a deep breath and relax a bit too.
One thing that I found helpful is to journal a bit about all of the thoughts and feelings that were happening. I suspect that in the months and years to come that I'll look back at it.

Good Morning! I hope you get the back-to-back snow days you are hoping for. Meanwhile, we should hit over 80 on Wednesday.
I just had that conversation a few weeks ago with a few people about just wanting to be "normal" even if for only a day. To be able to eat without thinking "did I just drink", "has it been long enough since my last dose of vitamins", "how much carbs/sugar/protein is in this" and all of the thought that goes in to our day-to-day life. Luckily, for me it was only a passing thought and I got out of my own head. It is reassuring to know I am not alone in having those moments.
QOTD: I have made some low-carb/low-sugar versions of several things. I will freeze portions of things to keep me from eating too much. I think it has helped me so I don't eat the regular varieties of the specific foods/desserts. So far they haven't been a gateway to the non "healthy" versions.
Time since surgery: 2 years, 7 months
B: SF latte, eggbeaters with roasted red pepper, ½ an orange and 2 turkey sausage links
L: Boiled egg, Albacore tuna mixed with mustard, lettuce leaves (to make wraps) and baby carrots
S: SF latte, Yoplait Greek 100 pineapple yogurt, jerky pack, 100 cal. pack of cashews
D: Spaghetti squash casserole and 2% fage/Jello mixture
S: decaf latte
E: 45 mins stationary stepper this morning and 40 mins of elliptical at lunch
V/W: On track

Good morning JB and menu friends, it's been so long since I last posted. My return to work has been going really well. I'm also loving the gym. It sounds so strange to say those words. I haven't lost any weight in the past few weeks but I've lost a ton of inches especially in my legs. I dropped in at my parents house last night and first thing my mom said was oh you've lost more weight. Then she said I shouldn't lose any more because I was at a perfect weight. I mention this because she dosen't hand out compliments easily.
QOTD : I make heathier versions of savory foods because I do not eat bread, pasta rice or potatoes. As for desserts I definitely think it would be a slippery slope. I know myself and if I made a faux cheesecake, I'd eat the whole thing,. Or at least I'd try.
