What's on Your Monday Menu, RNYers?
Good morning JB and my peeps. Busy and good weekend overall. I had that Peer Led Support Group on Saturday and LynnAlex from the boards here showed up! I have met Lynn before, since we had surgery on the same day and went through the same program. She recognized me on the boards after we had met at a meeting I believe right before we had surgery, and got to chit chat in the hospital since we were both in for a couple of day. She looks awesome and has been doing so well. It was really nice to see her again.
Yesterday my littlest one, Kaladin, came down with a fever. I gave him Motrin about half an hour before I was able to find my thermometer, and 30 minutes after his first dose his fever was still 101.9. So, he slept with us last night and we woke up at 2am and the kid was literally about to burst into flames. So we gave him another dose of Motrin last night. I did send him to my moms today with the medicine. I trust that she will keep on eye on him and call me if things get too bad. He's not puking and no diarrhea or even runny nose, just the really high fever. My poor little guy.
Hubby is headed to Lafayette, LA today, so I'll be a single mom tonight. Bugsy has a vet appointment tonight at 6, so I'll have a crazy busy day today.
JBQOTD: I think I do okay with some of the healthier substitutes, but then others I can't do. Everyone talks about Pork Rinds as a chip substitute, and I have to tell you that I loved pork rinds before surgery and they chew down to nothing like chips and I can eat a TON of pork rinds now, so I don't usually get them. I'll over eat them, just like a "bad" alternative. But I am working on perfecting a protein cream cheese muffin, and I can make those and eat them in moderation, so they are a good alternative for me. They are a work in progress, and aren't quite right yet, so maybe when I do hit that perfect recipe, they won't work for me because they'll be too yummy. I'll just have to wait and see.
19+ months since surgery Weight is hovering at 160 on the scale.
B: 1 egg, 2 protein pancakes and coffee with SF Coffeemate
L: Romaine salad with 3.75 oz of fat free feta, a few olives, some pickled veggies and some BoltHouse Farms Ranch Dressing (I measure everything)
D: 5 ounces of baked cod (hubby is out of town, so I'm making fish!)
S: Carbmaster Protein Smoothie, Raspberry Cream (My favorite flavor). a clementine
totals: Calories 775 Protein 93 Carbs 35 fat 27
Great menu, hoping that I can stick to it. I'm busy this evening so I think it will be easier, especially with a sick kiddo.

editing with new stats here. I planned on having 2 pancakes and one egg, but could only get one of the pancakes in with the egg, so here are my new stats:

Good morning. Heading to a conference for two days this afternoon. I found out I was presenting mid-week. Spent most of the weekend putting that together. Hopefully the snow lets up as it's in Lake Geneva and I have to get there before dinner. I'm locked and loaded with a mini version of my vacation food bag.
QOTD - if the food is good I like faux stuff. But I'm always reminded of my childhood and weigh****chers. They had faux recipes and none of it was good. The peanuts made from roasted mushrooms still give me nightmares. I watch that Rocko Disparido (so?) where he fixes recipes to be healthy. I really like that as a general concept, so I don't see it as faux. Just making it better/healthy.
B - yogurt and granola
L - 1/2 cup of leftover omelette from yesterday
S - premier shake and ostrim jerkee
D - ? Depends what's at the conference. I'm targeting a small salad with 3 oz protein

It didn't taste like a peanut. And it didn't help that I hated mushrooms as a kid. My mom used those cheap canned mushrooms and salted it. Then turned them into hockey pucks by roasting it. Weigh****chers back in the 70s was horrible. Much better today. That Rocko show on some weird cable channel is really cool. He makes this super olive oil that is 33% of the calories. You mix some no cal thickener (something like a guar gum) with 30% olive oil and 70% olive brine from a jar of olives. I want to try that one day soon.

The nerves set in last night for sure....two more days and it's finally HERE. It wasn't until I was looking up old threads on suggestions for what to bring to the hospital that I got that twirly feeling in my stomach. I'm excited, and nervous at the same time. Today I'm keeping busy by working on shipping labels to send out a bunch of sculptures, doing some pre-surgery cleaning (and laundry ugh...the bane of my existence), and making a plan for tomorrow's clear liquid day. Yesterday we walked around the local mall and I picked up a Sophie Kinsella book (I always end up busting out laughing when I read her stuff) and a new video game for my 3DS...between those two I'll have plenty to do in any downtime between now and then.
QOTD: I'm not a big fan of faux sweets...they've always tasted a bit weird to me and I'd rather just skip them. I did just try the mashed cauliflower alternative to potatoes and that was pretty good, but honestly I'd probably just eat the cauliflower steamed as it's just less mess. At almost 40 years old I've finally admitted that I don't like to cook, so healthy foods that require less time are a win for me.
