What's on Your Monday Menu, RNYers?
Daylight Savings Time got me this morning. Woke up late but thankfully I had packed everything I was going to eat today in the fridge for a quick grab. Also glad I set out my clothes last night- no telling what i would have thrown on this morning! :)
QOTD: Aside from sugar free jello, I just try to stay away from sugar. It is a weakness for me and I have an all or nothing personality. If I start with no dairy, no sugar ice cream, I am way to close to stopping and getting the real deal! :)
B: Egg casserole
L: (left overs) Pork Tenderloin Medallion broiled carrots
S: cottage cheese/ cutie orange
D: Mexican casserole
BTW: Jumped on the scale this morning and all my efforts last week paid off- down 4 pounds!!! Haven't seen 175 on the scale since I don't remember when!!! FEELS SO GOOD!!!

Hey all! Man I hate daylight savings time. It is soo dark and cold here!
QOTD: Yes, if you can handle it mentally yes you can make healthy versions of bad things. For me it comes with a trade off. So- I love pancakes and waffles and other really terrible things. I do make protein waffles and pancakes and muffins. No I can't just eat 1 and be satisfied SO I have to eat dense meat first like chicken turkey etc, maybe 2 oz, then have the pancake, otherwise I eat 9 hundred (ok maybe 4) pancakes which is sooooooo not the point of making them. My last was I made banana pudding for DH, I made myself a healthy version with banana pie yogurt, cool whip, two tiny slices of banana and a protein cookie.
We are chicken sitting through tomm- got 4 eggs yesterday- blue and pink/brown. The blue and pinkish ones are my fav- It is like my own personal easter egg hunt everyday.
Food for today- lots of coffee sheesh
gizzards/mushrooms
turkey meatballs (got a new brand called cooked perfectly) they were BOGO at publix then extra coupon off so excellently cheap.
rest of protein waffles
hard boiled egg whites
We are getting two dozen baby chicks next month for our new farm, so excited! I love finding eggs!

You really need to make a road trip. Maybe Grim and JB should have their wedding here... just saying. Then we could have deviled eggs with our black bean wedding cake.

Good Morning!
So jealous of you snow days - it just took me almost an hour and half to get to work. And I had to park on the roof of the structure, which means I will have to scrap my car after work. The only "benefit" to being in the structure is not having to scrap. Boo!
We had a pretty good weekend, nothing too exciting. Sunday my husband and I ran a 5k - ohhh was it cold! My lungs still feel chilly! I'm glad we did it though. I finished in just over 40 minutes, not great but now I have a time to beat for the year! We did end up leaving the kids with my parents, 16 degrees was just to chilly for them. Then I had a baby shower - so nice to see old friends that I don't get to see everyday!
Today is my me and my husbands 4th anniversary, even though we have been together for almost 9 years. We joke that we finally tied the knot to avoid the Obamacare penalty :) We got married at the court house in Ohio, had a party in the summer with family and friends. Since they didn't have to pay for a big wedding they took us all of go a Disney cruise. In my opinion it was perfect and I wouldn't of done it any other way! I included a picture of us the day we got married, because well why not?!
QOTD: I have mixed feelings on this. I'm a big fan of substitutions for dinner - riced cauliflower, zoodles, etc. But I find that sweets just taste off, and I won't stop at 1 piece/serving because it's "healthier" and in my mind more easily justified to keep eating. But sometimes it is a nice alternative!
