I would never pick pasta, bread or rice. Those things can swell and cause serious problem down the road.
I would pick something that I would know it is easier on the system. And healthier - relatively?. Like crackers with some PB and preserves, banana, grapes, sweet potato, mash taters ..Etc. even cream of wheat may be better than bread or pasta.
Regular yogurt, etc .
I do recarb once in a while - and when I do that I need to make sure the carbs don't get "stuck" because they expanded in my small intestine. Pasta is one of those - "no hell no...".
Having dark chocolate Lindt truffles is my to go "stabilizer" to low blood sugar due to RH. I can bring my BS up and keep it up.
Make PB balls...

So, I think I also have some rh stuff going on, and glycemic index is really important to my responses. If I balance with fat or protein, I do better. So Based on my experiences, I think that whatever you choose for your experiment, avoid adding in much fat or protein. For example, cheesecake is a no for your meal, because of the protein and fat that will balance the sugar. Depending on the recipe, Mac and cheese also might not be best because of the fat and protein. So I think pasta with a simple red sauce. Or Mac and cheese with hardly any cheese. I would definitely do white, not brown. I think something like French bread, or cereal, or some kind of pasta. I had one of my very very worst experiences after having key lime pie--low fat, no protein, high sugar.
