made protein pancakes/muffins today. The following recipe made 24 servings. 70 calories, 6.5g protein, 1.5 carbs.

8oz regular cream cheese
8 eggs
4 scoops of Quest Vanilla Milkshake Protein powder.

I creamed the cream cheese and eggs until it was smooth and frothy with my kitchenaid with the whisk attachment. Then mixed in the powder.

I put half into muffin tins and baked at 350 until they looked lightly browned and a toothpick came out clean.

I had a pancake, plain, and they are delicious. Only mildly sweet, kinda eggy like French toast. The texture was good.

I think I'll be making these often.

Even though mine may not have come out as well/pretty, possibly because of larger eggs, and different protein powder... I will say for a faux carb substitute, it did keep me full! For the rest on the night. That was it.
