If the Wendy's chili has too many carbs for your comfort level, how about cutting down on the amount of beans you put in? If I eat their chili

I eat tend to eat around the beans cause I feel the same way.

Exactly my take on it.  I put some beans in, but not as many as the original recipe does.  And I also put more meat in... changing the ratio.  I think a few beans are fine... just try to make sure I have chili on days when I do not have so much cheese ;).  My carb limit is higher than some... 50 is kind of my personal ceiling.  And, love the unstuffed cabbage roll recipe!  Thanks!

Have you tried the crock pot unstuffed cabbage rolls? They are really yummy!

Forgive me, I don't remember who gave me the recipe. If you are reading this please take the credit!

Un Stuffed Cabbage rolls

1 tbsp extra virgin olive oil 1 garlic cloves, minced 1/2 cup chopped onion 1/2 cup chopped shallots 1 pounds lean ground beef or ground turkey or ground chicken 1 tsp dried parsley 1/2 tsp dried oregano 1/2 tsp salt 1 tsp pepper 16 ounces marinara sauce 1/2 head cauliflower or 2 cups riced cauliflower 2 1/2 cups beef broth, low sodium 1/2 large cabbage or 4 to 5 cups sliced

Instructions Heat olive oil and garlic on medium high heat. Add onions and shallots and coo****il softened. Add ground beef and coo****il browned and no longer pink. Add seasonings to beef and marinara sauce. Add the riced cauliflower to the beef mixture and stir until coated. Pour the beef into the crock pot. Pour beef broth into crock pot and add cabbage. Stir to combine everything. Cook on high 3 hours or low 6 hours. If you don't have a crock pot, simply cook ground beef in a dutch oven or heavy soup pot, follow recipe and simmer on low, covered for about an hour until cabbage is tender.

I live in Colton and work in Potsdam. Ogdensburg is about 35 minutes from us, but yes it's where we cross in Canada normally!

Morning guys,

 

Thanks for keeping the menu thread going despite the happenings....even if I don't post I always read it so I'm thankful it's there!
I'm hungover this morning...but not from drinking, just lack of sleep.  Hubby is out of town and last night was a mix of allergies, night sweats, and a restless kid who kept trying to scoot closer to me (and of course since I was too warm I'd scoot away...and repeat).   I wish I could find a magical formula to help my son sleep better....his sleep issues are related to his being on the autism spectrum and thus far we haven't found anything that works well enough for him to get a full nights sleep unless I or my hubby are there.  So this is totally me this morning 

QOTD:  It's probably my phone, but more because I want the school to be able to reach me if there's an issue with our son - I almost always have a book with me as well because I'm a bookworm 


Menu:   

Today starts my liver shrinking diet (again!)....crossing my fingers for no more delays like the last time (stomach virus ick!)

B - Premier Protein Shake

S - Fage yogurt w/strawberries

L - deli meat rolls (roast beef or ham....I haven't decided yet)

S - TBD

D - skim ricotta bake
