What's on your menu today (PHOTO FRIDAY) RNYers?
QOTD: well I just arrived home from my long journey home from Maui. It was a little over 22 hours from when I woke up in Maui yesterday and walked through my door a little while ago... So my last picture was just as I pulled up into my driveway and there was still snow. Left 80 degrees and arrived in 24 degrees... agh! But it makes the vacation all more sweet in some sense...
Dorced myself to get some sleep with some medicinal help on the plane but don't think I slept longer than a 45 minute stretch at once. Need to stay up today. Not sure where my food day officially began today.
On plane: fruit, cheese, cracker, spicy tomato juice
on drive home: 1 fitjoy bar
now: coffee latte with fairlife and miralax
other things probably to be eaten today- protein drink tbd, chicken soup with 4oz chicken, TJ roast turkey and cheese. Those are the offerings I have from my freezer/pantry til I go shopping .
have to Maryann and I saying goodbye photo as well as a sunshine on Maui one

Good morning everyone!
It's day two of my good mood and I'm hoping to ride it out all weekend. Sometimes all it takes are the little things to be working in your favour and you can feel the shift mentally. Good news has been sparse lately so when a few positive things start happening you take notice and hope they snowball into full fledged happy thoughts.
Last summer at our charity golf tournament we added a photo booth as an activity at one of the holes and although slightly hesitant about how it would be received by some it was a huge success. Our golfers ranged in age from 12 to 89 and every single one of them participated without hesitation and with a smile on their face. It was a great addition to the event and we got a lot of amazing pictures and even more positive feedback. So much fun and something we had to promise to many that we would continue in upcoming years.
QOTD The last picture on my phone is from last night when I was trying to help my sister book flights to BC to visit our family. She and her husband are heading out for a visit in March and it will be their first time there. I'm admittedly envious because I miss my family so much but I'm really happy for my sister. For many years things were easier for me financially because I was married and she was single. Now the situation is reversed and while I obviously wi**** wasn't such a struggle for me, I'm really glad she found her husband, that she's happy and things are easier for her financially.

it's just blueberries that I cook down with a little SF Torani syrup (either one of the fruit-flavored ones or the cinnamon vanilla). I just use a little for sweetness because the blueberries put out a lot of liquid. Sometimes there's enough pectin for the blueberries for the sauce to thicken up a bit - sometimes I have to add a little cornstarch to thicken it. Anyway, the blueberries last MUCH longer that way. I spoon it over plain or vanilla or coconut yogurt
Busy weekend ahead. My daughters Softball & the boys paintball wars. We need to get our gardens going too so hopefully we can get started on that. Wow, I tell you what...we are an active family and when I was MO I was suffering. I never realized how much I was giving it all I had just to hang in a normal day. Now I'm running circles around all these activities! I'm still walking 2 or 3 miles after a full active day! NSV?
This morning I finally stopped Starbucks and got the sous vide egg bites and OMG! I was thinking how can eggs cooked in that method be much different but they are! I like how they sit on my stomach. Much better than egg muffins or scrambled.
B - Egg bite
L - beef rib
S - egg bite
D - not sure yet.
The last picture on my phone is me and my Valentines dates. I also added my daughter before her softball tourney last weekend and the boys ready for their paintball wars.
Have a great weekend yall!!

Cute family!
Those egg bites...right!?! They are what inspired me to get the sous vide attachment and start making them at home :) Now I grab a premade faux egg bite from the fridge every day to take with me to work. I am happy to report that my homemade ones taste just as yummy as the ones from Starbucks!
