3+ Week Plateau and then huge loss overnight -- is this the norm?
I'm not sure I'd call it the norm, but it's extremely common.
Most people refer to this as the "Stair Step Pattern." Stay the same weight for a week (or 2 or 3), then lose a bunch quickly. Repeat.
Usually, if you record your weight once a month and graph the results, you'll see a pretty consistent pattern.

I had several long stalls and would often lose quickly after the stall broke... so not unheard of

Very common with WLS, specifically for me gastric bypass. I'm at goal now, but during my loss phase, would often see no movement for a few days or almost a week then boom! Big drop. I never had what many would consider a stall...or I never thought of it that way. I'd say the longest I went without a change was close to a week. My loss was steady. Started March 2016 surgery weight 272. Today, February 2017 I am down 137 lbs. Finally figured out HOW TO STOP losing lol. My body was on a losing train that could not be stopped. Had a mind of its own, so it seemed.
Keep to your exercise and food plans and all will even out. Gooos luck.
