What's on your Menu Today (Wednesday) RNYers?
Ironically I looked at that EXACT page yesterday and took their advice:
High Pressure Cooking Method: 5 minutes at High Pressure with 1 cup of cold running tap water on a rack + 7 - 8 minutes Natural Release
But I swear, chicken breasts nowadays look like they come from Super Morbidly Obese birds - this one breast I had was more than enough for me AND my BF, with leftovers. So after the 5 mins high pressure and 7 minutes natural release, I cut the thickest part open and it was ever so slightly pink. So I put it back in for 5 more minutes of natural release. Cue rubber chicken. Ugh.
I don't have an IP yet but as far as the rubbery chicken goes it could be due to the chicken being brined (salt solution) when you bought it. I have noticed over the past few years that a lot of chicken has a salt solution added to the chicken without labeling it as such. When you look at the nutritional values on the back and see anything over 50mgs of sodium that's indicator that is it's brined. On occasion you will see in very small print on the front(15% salt solution added). That could result in rubbery chicken. This also applies to turkey and sometimes pork loin or tenderloin. You usually don't have this issue if buy organic products but that can get very pricey especially with the amount of protein us WLSers eat.

I did mine in the Instant Pot too... I didn't add any liquids though... just threw the chicken in there with the cream cheese broken up into pieces, and then sprinkled the Ranch dry mix on top. I added the bacon just before we ate it (and I cooked it super crisp) along with the cheddar cheese...
Maybe if you do the IP again, you can set it on saute and thicken it up a bit?
I even served it on Superbowl Sunday as a dip with Chicken in a Biscuit crackers... they all lapped it right up! (I had it with a couple of pork rinds)

Allergies are kicking my butt- what's up February??? I think it's because we haven't had super cold weather and the damp is bringing out mold or something can't be pollen.
Menu kinda sketchy today.

Sorry for the crappy weather you are having DD2 and everybody North. It's averaging mid 80's here so no complaints from me...except maybe the humidity.
QOTD: I don't want chocolates because I don't care for sweets. I usually get my husband some of those Annie's chocolate covered cherries. They are his fav! I get my boys some assorted chocolates and I usually take my daughter to build-a-bear to let her create a stuffed animal. This year they have horses! My husband and I usually go to dinner. I don't like to make a big deal out of Valentines day because my husband really..uh...sucks at these kinds of things and I've accepted it. I know it puts unnecessary pressure on my hubby and I don't like that.

Keeping you, your mom and your family in my prayers, Daisy.
I have officially lost 100 pounds now! (naked). I want to lose a couple more pounds before my Febr. 20th one year appointment with the surgeon so it will show 100 lbs. lost with clothes on.
QOTD: No significant other, so not expecting anything for Valentine's Day. I do love flowers, though and would choose some pretty flowers over chocolate if I had the choice.
