Yogurt sugars?

I have successfully used plain unsweetened soy milk to make 'yogurt' in my instant pot using a smidge of fage plain Greek yogurt as the starter.  I was trying to come up with alternatives pre-op because lactose intolerance is mentioned so often as a problem after surgery. It isn't my favorite taste, but I wasn't surprised because I am not a great fan of soy milk either. Tofu I love, but not soy milk. Happily, I ended up tolerating the fairlife milk just fine and make my yogurt with that. I flavor it with either some of my own low/no sugar jam or with torani sugar free syrup

Also, don't count out a change in your lactose intolerance after surgery either. I have heard of weirder things.

My instant pot gets used constantly! I couldn't do without it. Maybe you should 'treat yourself' and try to find one on sale. I would give up my stove before my instant pot, lol

It is literally 'instant pot' and I bought mine on amazon. I got the 6 quart model. I'll try to link it, but if it doesn't work just search on amazon for instant pot and it comes right up. I also got the cookbook 'hip pressure cooking' to get started, but I have used pressure cookers and canners for years. I use it 3-5 times a week, and I make my yogurt weekly.

The soy yogurt recipe I used was from a vegan website, I'm not sure which one, and they used the culture starter instead of yogurt. Since my focus wasn't omitting the dairy completely (just trying to get rid of most of the lactose) I just used Greek yogurt. It came out fine, good texture and set, just not my favorite taste- and I ate the yogurt (not going to waste it, lol) with my sugar free strawberry jam. Now I make a quart of plain yogurt a week with my fairlife milk and I'm happy :)
