What no steak knives? I have 2 sets. Bought new ones, but couldn't bring myself to get rid of the old ones...

It's funny that you didn't appreciate steak before Grim -- I say the same thing about my husband.
Growing up, we had steak quite often -- but I hated it. My mother and father always cooked their steaks well-done. I couldn't understand why they liked steak so much -- I put it in the category of "don't hate it, but wouldn't go out of my way for it." I never ordered steak at a restaurant, for example.
When my husband and I had been dating for a few months, he took me to a steak house for dinner. As usual, I ordered salmon or chicken -- and he asked why I wasn't ordering steak. I think he was worried that I was trying to save money or something -- and I explained that I didn't care for steak that much. That was inconceivable to him. Long story short, he talked me into ordering a steak and when the waitress asked how I wanted it cooked -- I said "well." Hey, it's what I grew up with.
That was the moment that changed my life.
David said, "Wait - have you always eaten your steaks well? -- NOW it all makes sense!"
So he ordered it medium rare -- I could always get it cooked more -- and I have loved steak ever since!
Thus, like you, I ascribe my appreciation for steak to my husband!

I grew up eating steak the same way as you. I guess my mom didn't think it was fully "cooked" unless there were no more juices running from the meat. It was awful.
When my husband and I started dating the same scenario played out. He talked me into medium, and that's still how I like mine cooked. Sometimes, depending on the cut, I'll have it medium rare, but it's more of a temp thing for me. I like it hot throughout, warm or cool centers kinda gross me out. LOL Now even more so. My pouch doesn't like anything room temp. So weird, everything has to be cold or hot.

I am also towards medium -- depending on the cut.
My mom and dad's method was what I affectionately call the Shoe Leather technique!!

I always ate mine well done too. One time I was at a steak house and ordered a steak well done like usual. This steak was so damn good, the best I've ever had. I was sopping up the juice with my rolls and licking my fingers and everything. I ended up having some left over so I put it in a to-go container and when I got home I opened it and it was all red!!! It was medium rare but I couldn't tell in the restaurant because the lights over the tables were red hahahahah!!!! I've eaten them med or med-rare from then on!

I grew up thinking red meat was bad for you, and we didn't have it very often. And as an adult, I just never really mastered cooking any kind of meat outside of a crockpot. I had this irrational fear that I was under-cooking everything and would make everyone sick with raw meat. So I tended to cook the snot out of every piece of meat I met. Plus, at my last house the smoke detector went off if I even thought about turning on the stove...
All this to say, thank goodness Grim came into my life and (on our second date, I think?) bought me a huge pan to cook steaks. The meat man lives up to his reputation. Lol.
