As usual, I am posting when the day is winding down for most of you. I am busy busy busy lately--trying to fit in as many needed errands and projects and appointments as possible before my big Achilles tendon surgery next month.
C/AMAW is going really well for me still. I am down another 1.4 pounds. My total weight loss is 5.3 lbs.
I have stayed totally on track except for this morning, making PB sandwiches for my kids' lunches, I realized I had a lick of PB in my mouth. Like, I ran my finger down the knife, inserted in mouth. Although it was not much (1/2 tsp probably), it is a good reminder--as C/AMAW is--about mindless little sabotaging habits.
I have not really craved carbs much this week, in the sense that I am not dying for" carbs, carbs carbs!". But I have been more aware of triggers. Like, in the food storage room, walking past my husband's stash of Kirkland chocolate covered almonds. I do make him keep them downstairs, but if it were not C/AMAW, I would most likely eat 6-7 on my way through the storeroom to get the tomatoes or whatever. I mean, I don't know that this is a craving for carbs, just a habit of eating sweets or treats "on demand."
So those experiences made me again glad for the chance to be more mindful. AMAW = "Always mindful, all week."
As of this afternoon, I am starting to feel a little boredom with the week's choices, even though I'm doing CAMAW.
QOTD--favorite dense protein this week: Pork roast. At a local grocery store, they sell a thing called "spoon roast." They have a pork roast all wrapped in some kind of baking paper. You slow-roast it for 6-8 hours (!), and it is so incredibly tasty and moist and tender.
I also really liked the chicken I roasted in my new-for-Christmas Instant Pot. Moist and tender.
For a snack, I really love my home-baked parmesan crisps. Recipe below!
Today's menu:
Today's eating plan (half over!)
B: 1.5 scrambled egg with 1/3 oz cheddar
L: 3/4 cup chicken with curry sauce
D: shrimp with ****tail sauce
S: parmesan crisps
Pokemom's homemade parmesan crisps:
--2.5-3 cups shredded parmesan (I buy in bulk at Costco and portion into plastic bags and freeze.)
--oven hot to 400
--parchment on large cookie sheet 12x16
--spread parmesan thinly in two rows, spreading out to sides of pan, leaving an aisle in the middle
--bake for 7-8 minutes
--remove immediately from pan--i just slip the entire sheet of parchment onto a cooling rack
Notes: This seems to work best if you bring the cheese to room temp before baking.
Also, you can add spices.
I LOVE adding 1 to 1.5 tsp chili oil. I mix this in with my fingers before spreading the cheese out.
I also LOVE a spicy alfredo version: after spreading out the cheese, sprinkle with 1/4 tsp garlic powder, 1/4 tsp nutmeg, and 1/2 tsp coarse ground black pepper.
Other options: pizza seasoning (I tried and it was meh, IMO, but my husband really really liked it); smoked paprika (have not tried, but it will be my next experiment because it sounds so good).

That looks so good! Is it really crispy? Does it store well? Refrigerate, or counter storage???
I don't make snacks very often, because I don't really snack on a regular basis, but there are days that I will crisp up some pepperoni in the microwave and crunch on it... I would like this to go with it!

It IS really crispy. I have had to experiment a little with my oven and quantities. Once in a while, it turns out a little chewy. But since I've started doing the aisle-down-the-middle on the pan, they are usually crispy.
They store in the cupboard. I just put them in a ziploc bag. I don't know how long they would keep. We usually eat them up in 4 days max.
