I need to make egg muffins again! Those look and sound so good! So, tell me... how long do you bake yours? Because sometimes mine come out 'spongey', and the consistency turns me off, then I don't eat them. Is there a secret to making these things?

The key to the muffins is the make it about the stuff in the eggs, not the eggs. I put so much stuff in it that it breaks up the texture. Here is a picture of the inside of the ones this week. It's lots of spinach, bacon and cheese and the egg just kinda holds it all together. I bake them for 20 to 25 minutes at 350 depending on what filling I'm using. If I use tomatoes or something wet like spinach (though I always drain it as much as I can), then I have to cook it longer because it will be soft in the middle.

Next time I get extra energy in the kitchen, this is going to happen... maybe the same night I make those delicious looking hand pies!

I also want to make clear how precise I am when making these, so I know exactly how many calories in each one. I weigh my meat out before I cook it and then cook the bacon and veggies together. THEN, after it's cooked, I weigh the whole concoction and then break it into how ever many individual servings I'm making. Then I scramble one egg at a time and add the filling and eggs and then pour each one into it's own muffin cup to bake. It's a lot of extra work for me to do it this way, but I feel like I have a consistent food and when I was mixing it all together it was so skewed sometimes that I never felt like I was being honest.
These muffins are 6oz of bacon, 2/3's a can of spinach and 6 eggs and each muffing has 3/4 ounce of cheese mixed in. Comes up to 199 calories per egg cup and 18.3g of protein.
