QOTD- NYE is a stay at home night anymore. I don't drink, but I don't want to be on the road at all!! We make a special dinner or appetizers, play games and try to make it to midnight!

Yes, I love ricotta bake! I have no appetite and eating 3 x a day is tough for me. Never in my wildest dreams did I ever imagine myself saying that!!

Instant Pot arrived yesterday! Did a water test last night and this morning - works perfectly! I think I'll make yogurt today because we still have enough lasagna left over from Christmas to last a couple more days (or more....I don't eat much). No sense making a big stew or something that will go right in the freezer. I do have an existing yogurt maker, but it only holds six cups. Which once I drain it (I make Greek yogurt), is like three cups. I'll make a gallon in the IP because we eat a lot of Greek yogurt.
QOTD: we haven't done anything on NYE for years. Sometimes we stay up to watch the ball drop, sometimes not. My mother was talking about making pork & sauerkraut in her crock pot. Not sure if she meant for NYE or NYD. Doesn't sound that appealing to me, but if she meant for the family to come over, I'll bring my wonderful cranberry sauce to spoon over the pork. That would make it palatable... NYD morning we always go to this brunch that a friend of ours holds. It's usually the same crowd every year, and they're fun folks.

B: homemade plain Greek yogurt with homemade cranberry sauce
S: coffee with half & half, double protein shake
L: noticed I still had some stuff from the lasagna-making that didn't make it into the final product (some leftover mozzarella cheese and marina sauce with ground turkey in it). Might eat an ounce of the cheese topped with some of the marina sauce & turkey
D: small piece of bariatric-friendly lasagna (again....)
S: probably another Greek yogurt with cranberry sauce
exercise: went to water aerobics last night. I'll do some kind of strength-training today since it's been several days....
Best of luck of the yogurt making! I am loving my new Instapot. How do you strain your yogurt? Haven't figured out that magic yet.

I put a piece of cheesecloth into a spaghetti strainer and then set the strainer over a large, deep container and then just stick it in the fridge for about eight hours (luckily, we have an extra fridge in the basement, because it's pretty big - although they also sell yogurt strainers that are more compact than my homemade contraption).
The strainer (with the yogurt in it, of course!) has to sit up on the container so there are a few inches underneath it, because quite a bit of whey will drain out (you'll end up with half Greek yogurt/ half whey - so if you put 8 cups of yogurt in there, you'll end up with about 4 C of Greek...or maybe slightly more. A lot depends on how long you strain it for, obviously)
I got my cheesecloth through amazon, but you can probably find it at a kitchen store or some store that has a comprehensive kitchen dept. I just rinse it well after using it and then use it again the next time.....
