What's on your Menu Today (Wednesday) RNYers?
Do you have a recipe for your meat loaf? Or just omits the bread crumbs? I've been wanting to make some, but haven't quite found a recipe that I like.

I'll check those out. I feel like pork rinds aren't as common to find in Canada...but maybe I haven't been paying attention...

I use a mixture of things for my meatloaf... First, I use turkey, then I add finely chopped mushrooms, bell pepper, jalapenos, olives (yes, we love olives), Parmesan cheese (helps to bind), pork rinds, and those fried onions in the canister, and 2 eggs. Plus a multitude of seasonings.
The mushrooms keep the lean turkey moist... even if you don't like mushrooms, you'll never know they are even there... Case in point is my MIL *****quests my meatloaf all the time, and hates mushrooms! LOL
I then make a 'dip' in the top of it and fill it with cheddar/colby/etc cheese (whatever is on hand). I'm NOT a ketchup kinda meatloaf lady
I cook to the thermometer temperature... I never guess... I hate dry meatloaf (and with turkey, it's easy to make it dry).

I always have the opposite effect. My turkey meatloaf is so moist that I have to over cook it so it won't fall apart. I don't use a lot of binder....usually just handful of whole wheat panko and a little parmesan and 2 egg whites to 2 1/2 lbs of lean turkey. It makes so much juice that I keep it and separate the tiny bit of grease that it has and freeze the broth to use when I make soups. I also like the idea of the "Dip"!

I use my regular meatloaf recipes and instead of putting bread crumbs in it I put Parmesan cheese, the stuff in the green can. It comes out the sae way my old recipe did..Yummy!

Good morning menu gang! I am super ready for Christmas even though some of my family members are "Debbie downers".
QOTD- I love to play poker. I love board games too. My favorite game is Jenga. I could play that all night.
Time since surgery 9 months. 163 this morning. Almost to the 50's wootwoot!!
B- 1/2 of a scrambled egg and a pitiful little piece of bacon
L- 2 oz Grilled chicken
D- 2 oz taco meat with a little cheese on top
S- Protein Hot chocolate
