Beef jerky worked very well for me in the early stages. Just chew chew chew. Look for one that is low in sugar. I am still drinking a protein shake most mornings (mostly work days) because it just sits better in my pouch in the early hours and gives me a good boost of protein. My stages moved pretty slowly, and I think that worked pretty well. I started off with fish, scallops, and shrimp when I finally got to dense protein because that seemed to be much easier for me to tolerate and it is a bit softer.

I have to start this by saying, I am not an expert, but I personally have had an Adkins "Lift" bar every morning for breakfast, since the beginning, as well as now, at goal. There are definitely different types and qualities of protein bars, but it hasn't had any ill effects on my health or my weight loss!
I do eat protein bars occasionally - about one a month. I usually have one or two with me in case of "emergencies" (like when I'm traveling, need to stop to eat, and there are no bariatric-friendly options around). However, it could easily become a habit, so I have to really watch it. And I do - again, I probably have one of them a month...
Beef jerky is my best friend on the run. I measure out a serving and throw one in my purse and have one with me at all times. I eat at least 4 servings of jerky a week lol. I make sure I get the 80-100 calorie/serving ones though.
And I'm not surprised the vets gave you good advice. They know what they're talking about!

I have to say that I always have a protein bar in my purse, because I frequently find myself stuck at work and have run out of whatever I brought (yogurt, protein powder packet, cheese, etc.) But the one protein bar gets kind of raggedy... I have recently thrown one away due to excessive raggediness. That said, I find it a much better option than entering a fast food establishment or convenience store. Those places are scary.
I have had two protein bars since surgery. I have a box with four in it, but I recognize that they are a last resort. And these are not the tasty candy-like bars. They have 30 grams of protein, 1 gram sugar, 190 calories and I cannot eat an entire bar.
Also, I had to go to Taco Bell w couple of weeks ago with my daughter. I ended up having the insides of a steak fresco soft taco... not so bad and only 70 calories. But again, that place scares the h*ll out of me.
