In keeping with the theme of the day....
For me, getting in my protein was tough enough (and my surgeon and NUT said "protein first, always and forever". It's sort of their mantra). AFTER that, they said to think of nutrition. Even though we are taking vitamins, we still need to think about nutrition and for me, the vitamins I get from vegetables is more important that the vitamins I get from carbs. Once all of that is taken care of, if I have room... because we must also consider portion control... then and only then can I think about having something with a carb... and for my NUT and Surgeon, that means whole grain only. No white bread, white flour crackers, white flour anything... whole wheat, corn meal, rye, barley, teff, spelt, etc...
I have found that probiotics (fermented veggies, yogurt, kefir, etc) has helped with my constipation more than anything else.
In any case, I'm enjoying baking again and have learned to make whole grain crackers from scratch. Who knew? The problem for me is that if they are in the house, I want to eat them... so I'll make as small a batch as I can, have two for lunch and take the rest to one of my kids houses where the grandkids get to eat them. They are happy, their moms are happy (because it's less garbagy than the store bought stuff) and I'm happy because I get to bake and eat a couple of crackers.
Whole grain, sour dough bread is next on the agenda. Not sure it will be worth the effort, but we will see. To have a piece of toast with some smashed blue berries and peanut butter would be very nice, I think.
