What's on your Menu today (Wednesday) RNYers?
Hi DC, Your recipe is similar to mine, the only difference is I haven't put the shredded cheese in. Is that and the eggs what bind it together? I use a small amount of the whole wheat panko bread crumbs and some grated parmigiano reggiano cheese as well as eggs or egg whites. If I could lower the carbs that would be great!

I use ground flax meal instead of the bread . not a lot. 1lb meat - start with 1-2 TBS of flax meal or ground chia.
I use eggs. And a good quality salsa as a topper

QOTD: Great way to avert the crisis and make some Brownie points with the boss at the same time. We recently got back from a week-long camping trip. I usually pack so much junk. I thought I did better and just took the junk I thought DH would eat. Guess I really didn't realize how much of the junk I usually eat on the trip because I brought almost all of it back home: Klondike bars, chips, cheese puffs, candy, etc. etc. Hubby has been taking stuff to work for the last 2 weeks to get rid of it. I even brought half of the good stuff-meats back home. We don't rough it - we're in a camper with a small refrigerator and freezer so at least none of it went to waste. Haven't had to buy groceries other than milk & bread for DH for 2 weeks :).
B: Decaf coffee w/scoop of GNC Vanilla Protein Powder
S: Light-n-fit Greek Strawberry cheesecake yogurt
L: Left-over Eggface baked ricotta (made last night for the 1st time & DH loved it - said he didn't miss the noodles at all)
D: Baked Tilapia and maybe a bit of broccoli
E: 2 miles on the eliptical done

I ADORE my boss. She is such an amazing boss and friend. I would do anything for her and its nice I can "treat" her once in a while, even if its cuz I screwed up and she gets the tea biscuit LOL LOL Nice not to have to go and get groceries other than the staples right! LOL

QOTD: WE like any kind of nut, cashews being the fav, I have had to adjust my menu 3 times because I grabbed a handful without thought. ??Why does my brain not kick in until AFTER I've eaten them??? They are now banned. (did not upset new pouch :( !! )

is funny how we all crave different foods. Nuts do noting for me, hubby buys honey roasted peanuts all the time and I am not even tempted, but a cake or cookie or pastry and I get cold sweats. Its really hard to change behaviours, trust me and you are only 8 weeks out Pat it takes a while.

i wonder how many of you are as groggy as I am from the election coverage. I'm just so sad. I can't imagine what it's like to be a marginalized person in the states and realize how little your own country cares about you. I can't imagine explaining this to children. Apparently our immigration website crashed last night because of the flood of people flocking to it.... I've got a spare room!

Facebook is a mess today. As stunned as I am, I can't read it anymore. I am scared for my family to a point, but I refuse to encourage all of the sadness. What we need to do is come together as a country and do as we say we want. Do it on a local level, and treat people and help people like we want it to be. This country is divided politically, but it's not ruined. Not if we all actually DO what we say we want (and I start with myself).

Good morning! Job interview this evening with a CNO of a small hospital, so I've got on my interview duds today. Then another interview on Friday which is the 2nd round for me. I'm keeping my fingers crossed.
QOTD: Of course! The head game of this is so much more difficult than the physical part 99% of the time. I order meals often that I cannot even partially finish, or think things sound so good that I used to eat. I think this will always be a struggle for me.
