What's on your Menu today (CROCK POT RECIPE & PHOTO FRIDAY) RNYers/VSGers?
Good morning!
Ceockpot Thai Peanut Chicken:
3 lbs chicken (breast, thigh, skinless and boneless)
1-1/2 cups salsa verde
1/4 cup PB2
2 Tbsp soy sauce
1" ginger, minced
Cut chicken into large chunks. Mix remaining ingredients. Layer chicken in thirds in crockpot, alternating with sauce mixture. Cook on low 6-8 hours, do not stir. Serve over riced cauliflower (I buy mine at TJ's but you can rice your own by microwaving cauliflower and then pushing it through a shredder).
B: coffee, Click Mocha shake
L: Redemption Salad from my fav tiny shop on Orcas Island: salad with beans, cheese, salsa, guac
D: scallops and maybe some veggies
S: babybel cheese, calcium chews x2, Syntrax grapefruit in water
Totals: 637 calories, 71 protein 44 carbs 19 fat
Aack! I just got a Whynter gelato maker for my birthday from my so sweet wife!!! So adding protein ice cream to my menu instead of SYntrax...

Love all the great photos and recipes! I am on my second recipe using my instant pot. Here is the one made yesterday. Yum, I added a couple cans of stewed tomatoes and used the bean setting on the pot.
