Could use riced cauliflower... Love this. Next time I try chicken this will be it. Unless I could drop in for dinner?
Beef bourginon Very low fat and high protein. To me the best thing about a crockpot is how it tenderizes v ery lean cuts of meat even Venison.
I buy an entire eye round from the oriental grocery store where it's both very fresh , totally trimmed of fat and very cheap .
I usually also buy 1/2 the amount of lean pork which is even cheaper.
In a large wok spray oil and sauté sliced garlic - at least an entire head.
At the same time I cut beef and pork into 1x3 inch pieces and brown on all sides and then place beef and garlic in crock pot . I like to use steak rub on the beef and pork rub on the pork before I sauté it.
Add water to crock pot ( at least three cups) and coo****il almost tender ( pork takes less long to cook so I add it one or two hours later ) I also cut up mushrooms carrots ( add carrots with pork) and can even add baby potatoes.
About one hour in I add leftover cheap red wine , Inexpensive Chinese cooking wine or flat beer from leftover half drunk cans left behind by the boyfriend ( obviously only one of these choices)
This sounds complicated but after the first time you'll discover it's much easier with the crock pot than a regular oven . There are a lot of variations you can make - like sautéing paprika powder after you've browned the nmeat adding stock to bring out the flavor .. Which makes it Hungarian rather than French . Or after the meat is cooked you can purée the leftover juice with the some what cooked carrots and add fat free sour cream or butter buds and powdered milk .. And it's called a Transylvanian hunter stew.
I like all the options with this one!

So I had my post all typed up and then it disappeared...Have to rush to a training class, but here are my pictures. One I was 2 months away from having the girls and the other one is at the pumpkin patch when they were 10 months old. I will be meeting up with my daughter and her boyfriend because I am already up in Sacramento for work and then we are spending my birthday tomorrow in Sonoma, so there will be wine tasting involved. I am doing my best with food while away from home. This seems to be my new normal. Looking forward to a few weeks of routine at home. Sorry I am on my iPad and it won't let me resize the pictures.
