What's on your Menu today (Thursday) RNYers?

QOTD: Hmm. I have a pretty good dietician at UW's Weight Management Clinic. She thinks I would feel better if I upped my carbs a little and thinks I might feel better at 800 calories a day, but is totally fine with my decision. I am tracking closely my carb intake and weight loss. I think I am going to be one of those people who just slog along at a pound or two a week. Has been very consistent with me. Slow but always down. Well, that is not really answering the QOTD but anyway ;).
B: Premier Protein Chocolate with coffee
L: LF cottage cheese with 6 pineapple chunks and Miracle Whip Light
D: Taco Bell Cantina bowl, no rice, beans, corn salsa or dressing (fingers crossed, I am travelling)
S: Calcium chews x2, Light & Fit Greek Pumpkin Pie
Totals: 667 calories, 77 protein 44 carbs 22 fat (based on the whole Cantina bowl)
So excited to post my crockpot recipe tomorrow! I love to cook. But it is a struggle to make smaller amounts, for sure!

Slow and steady is great, as long as you are losing weight. Its great to work towards losing all your weight in your "honeymoon" period but not everyone does and that's okay.
Don't forget that anything you make in your crockpot you can always portion it out and freeze some for later or a rainy day kind of idea. Does not have to all be eaten at once LOL.

You should see my freezer. Leftover buffalo chicken. Leftover carrot protein pancakes. Leftover chicken Bengali soup. Leftover peaches, roast beef hash and refried beans (from pureed stage). Leftover salmon chowder. New addition two big packages of bacon. I could feed an army.
You need a week where you eat out of your freezer! LOL I do that at our house with leftovers... they're not frozen, but there's a little of this, more of that, and some of the other stuff.... I heat it all up, put in out, and it gets taken care of (the leftovers are gone after that).
I found that if I freeze too much, then it looks gross in the freezer, and I'm not EVER 'in the mood' for whatever it is. I have to force myself, and then I'm usually pretty happy with whatever it was! LOL

That is my problem. Only two of us in the house and I keep getting inspired to cook (which I love to do...) but then I make something and it tastes okay but too much, so I think "well, I can freeze that and maybe it will taste good next week). But next week I am on to the next great recipe. Tomorrow will kill me... so many new crockpot recipes, so little time.
Menu family, I am so super excited. I had a great call with the supervisor at the postion I'm considering. We spoke for 40 minutes. At the end he told me he'd have HR call me. So, I was driving with Kal afterwards and I got the call. They offered me the position, at significantly more than what I discussed with them yesterday. Apparently, I impressed on the call today.
I am over the moon excited. I'm waiting for the email today, but I accepted their offer immediately. This is a 28% raise over my last position. 28%... holy ****!
