Breakfast -1/2 toasted bagel with fat free cream cheese ( I mix it with butter buds to make it creamier tasting) homegrown scallions and 1/2 package of gravlax ( wild caught salmon preserved with dill Norweigian style)

was totally stuffed till mid afternoon.

Tea with cardamom and anise.

Late lunch ( and probably dinner/ snack too ) roasted pumpkin salad pad Thai style with low fat peanut sauce.

Recipe - peel and cut roasted pumpkin ( 3 cups) into chunks

put broiler on

start large wok with garlic ginger fat free pancetta ( smoked roasted pork eye round) or low fat chicken sausage or diced ham ( or fresh peanuts if making vegetarian version) add chicken stock 1 cup

Add  approximately 4 tablespoons low fat pad Thai sauce and butter us to taste

roll squash in sauce place on roasting pan and broil, turning

while squash is cooking make peanut sauce in same pan- add one packet peanut sauce mix and two tablespoons low fat peanut butter  and one cup water to remains of pad thai sauce . Add dissolved cornstarch to thicken. Take off heat

cut up one onion some colorful pepper and a head of baby iceberg or other substantial lettuce . When squash is roasted add all ingredients to warmed up peanut sauce and serve . yummy !
