What's On Your Monday Menu, RNYers?
I used 1 tablespoon each of ground flax and chia seeds, 1 cup of almond milk, and 1 scoop of protein powder. I covered it and let sit overnight in the fridge. It was gelatinous when cold, but became a liquid after 1 min. in the microwave.
I don't know whether I should a) increase the seeds to 2 tbsp. each and leave the liquid the same, b) reduce the liquid to 1/2 cup and leave the seeds at 1 tbsp, or c) reduce the liquid and increase the seeds. Or maybe leave the measurements as is and just cook it longer.
I could try out all these permutations, but thought it might be faster to ask. :)
I use 1 tablespoon of ground flax, 1 teaspoon of chia seed, 1/2 cup almond milk and 1/2 scoop protein powder. Whisk it together and microwave it for a minute and a half. I play around with the liquid amounts and how long I let it sit after microwaving. It thickens up a lot of it sits for a couple of minutes. I made it with 1/2 a premier protein shake this morning instead of almond milk and that was too much liquid. It was runny.
I'd like to try mixing it the night before like Shopper, but haven't yet.

The yogurt would certainly make it thicker, but I haven't been able to find a low carb yogurt in Canada yet. The almond milk (unsweetened) has only 30 cal/cup and 1 carb. I really like the fibre content and the omega-3s provided by the ground flax seed and chia seeds, and the added protein makes it a good meal choice.
Once I get the consistency right, it will be an excellent winter breakfast!
QOTD: You missed that we planned Thanksgiving dinner at YOUR house this year... We'll all be there ready to eat healthy, so get to cooking! Hahaha!
We did miss you though, you should give a heads up next time so all of us mothering types don't worry about you. Glad you're back - and I agree, adulting is tough ****!
Weekend was good, managed to get everything in that was planned. Now I need a weekend to recuperate! We ate at Joe's Crab Shack Saturday night, and I have to say, I think it was the best meal I've had post-op. Hubby and I split one of their grilled steam buckets, and I think it was seasoned with some kind of Cajun seasoning. I was in heaven. I had crab and shrimp, a bite of the andouille sausage, and a bite of the corn on the cob... I didn't get that heavy feeling like I do from most meats, and it was SO TASTY!! I usually don't enjoy eating at chain restaurants, but I really loved this! I wanted to go back again yesterday! Hahaha!
Today it's 'coolish' here in OKC... I was able to pull out the new leggings/tunic I got at Ross a few weeks ago, and I'm wearing it with my new boots I posted about last week! I feel very cute today :) And these leggings are the SOFTEST I've ever felt! I keep feeling myself up

So Target has a TON of really cute tunics too... this one is actually shorter than the one I bought at Target, but that one doesn't fit me yet. They didn't have it in my size, so I bought the one smaller LOL I hope it fits before it get too cold! But any long-ish sweater should work too! These aren't LulaRoe leggings, they're 4.99 ones from Ross, but they are soft and cute none the less!
