What's on Your Wednesday Menu, RNYers?
I had to stop at the Nice N Easy on my way to work. You guys know I can't even function without my morning joe. LOL
OMG, lentils. I am a fervent legume fan, but I just can't get behind lentils. Maybe I'm just not preparing them the right way...
The green and brown lentils do nothing for me, but the tender red lentils cook down into a thick golden chili-like consistency that I flavour with curry spices and garlic and sometimes a bit of ginger. You can eat it as a side dish, a main dish over zoodles or riced cauliflower (haven't tried that yet) or thin it down a bit to make a hearty soup. Sometimes I put diced red bell peppers in it for a bit of colour. Delicious, and a good way to get turmeric into the diet.
Dude, this whole post is like a lentil love letter. I'ma get me some red lentils today.
Don't forget Dip! You can also use it as a dip! I love the red lentils with curry spices added!

AV, I had a ****ty night as well. My Kal skipped a nap yesterday and I was able to keep him up until around 7pm. Historically, that would mean he slept until 4:30 or 5. I made the mistake of staying up watching true crime documentaries on Netflix and working on this super cute chunky scarf.
So, when my kiddo woke up at 2:30am and jumped up and down on my bed for an hour, I had to finally get up. He was up until exactly 5:53am (I watched him nod off and marked the time) I had already had 2 cups of coffee, so I was pretty much screwed. I did end up dozing off and on for an hour, but I am going to suck at life today. My hubby is coming home and should be home before dinner, but I think today is going to be hard. My MIL said she'd take the kiddo for a few hours late this morning, so I'll take the opportunity to decompress. I was planning on hitting the gym, but on so little sleep, I don't think I'm going to make it today.
Here's how my morning has gone:
One year since surgery
B: tomato with feta at 5am, and then a light and fit greek yogurt. I've had 2 cups of coffee so far.
L: 4oz turkey deli meat on 1/2 a flat out with lettuce, mayo, pickles and onions
D: shrimp ****tail because I don't want to cook
S: not sure. I don't have any really bad food in the house right now, so it will have to be at least something healthy.

I am tired today also, only because i went to the gym after the boys went to sleep, THEN food prepped for today, and ended up going to bed late by the time my body and mind just STOPPED running around! lol
A) that scarf is super cute and B) I LOVE true crime **** My husband thinks it's weird, but whatevs. I have the ID channel on alllll the time when he's not home.
