Fresh Veggies

I added fresh veggies back in late May, not with permission, but because my veggie garden had started producing. Some did better than others in my pouch. Tomato skins and I no longer get along, but I can cut up a small tomato (like a cherry tomato) and peel the skin off and eat the rest without a problem. I skin and seed cucumber slices. Lettuce just hates me. Cabbage, asparagus, Sugar snap peas and broccoli are great. Radishes are lovely. I didn't even plant corn because I know I can't eat it. Now, cooked I can also eat spinach, beets, okra, cabbage, peas, green beans, turnips, carrots and most everything else previously mentioned. Because the amount I can eat is so small, I'm finding my garden is producing more than I can eat fresh, so I'm blanching and freezing a whole bunch in portions for hubby and I and not in large batches. I bought one of those vacuum food saver things and it works great. Looking forward still to harvesting Brussel sprouts and cow peas (black eyed peas).

In any case, I started with one bite of different veggies and if I tolerated it, the next day I had two bites. I still cannot eat lettuce for some reason, but I am happy making a small salad (two or three bites) with spinach leaves.

Concentrate on proteins. If you are following your plan you should be in ketosis. Adding sugary fruits and vegetables are adding carbs to your diet.
