I can hide her posts from my wall, yes... but what I really want to do is hide her from my posts!

Restricted is the way to go. They don't get notified but it's how to unfriend someone without notifying them. You still show up in their friend list, but unless you make a post public, or in a group they're a member of, they will never see it
I've done it to most of my in laws ;)
I made a separate list for "kids"... I put my children, their friends, nieces and nephews, etc (and my mother in law who isn't restricted and my pastor). When I'm posting or sharing something not meant for innocent eyes, I choose "custom" and don't allow "kids" to see it

If she is your fb friend, she will see any comment you make on a public post pop up on her feed (the little globe next to the picture means it is public). Even if you unfriend her, she can see what you post on public groups and posts but it would not automatically pop up on her feed. I believe you would have to block her completely to prevent her from seeing anything you write.

Ahhhh haaah!! I fear this kind of thing happening. That's why I feel that I'm one of the last people in the universe that is NOT on Facebook. It's not that I don't want to be.....I know I am missing out on some great connections and info......but I simply don't not understand how to work it.....therefore I'm scared everything I say or do will be out there for the whole world to see.
I need to find a pro who can teach me the abc's and privacy setting ins and outs.

You are not the only one that isn't on facebook, lol. I agree with possibly missing out on information, connections- but I do not miss out on the bs that can come with it. (This is true for any interactive internet sites though I realize ) I am fairly private person. I know many people enjoy facebook as a great way to connect with others, I just choose to connect with friends and family via phone and text. My cell phone, I just started texting on about a year ago, only from daughters teaching me how. I keep telling my family, I am getting old ..... This site is about all I can manage tech wise LOL
