Cheese and Sushi
Be careful with cheese. You could eat a billion calories of cheese every day.
For sushi, eat the fish, avoid the rice.

Hard cheese I waited a while, probably close to 6 months. I always feared I could not chew it enough. I am almost 3 years out and hard brick cheese i**** and miss for me. I do better with the softer cheeses like Baby Bel, Brie or a bit of shredded cheese melted on turkey kielbasa. As for Sushi, NEVER. Meaning the one with the rice on the bottom. I don't and won't eat that. RICE is the devil in my opinion. I have gone out to a Sushi restaurant, hubby gets sushi and shrimp tempura, I get salmon & tuna sashimi (which is just the fish, no rice). I didn't have that until I was a year or more post op. But honestly don't eat rice, its just not worth it.

Love cheese. Ate it (and eat it) all the time. Hard cheeses especially... my son drags me to Marianos and Whole Foods for fun new cheese experiences.
But sushi... avoid rice like the plague until you are a few years out.

I am three years out and can't eat enough of either!
I eat more cheese than meat and I eat sushi, sashimi, maki rolls, etc at least once a week and have since at least 6 months out. Everyone is different. You'll know what works for you almost immediately!
I am almost 3 months out and I have had sashimi, but not sushi (no rice)... it was like butter! Yum!
I do fine with any cheese, hard or soft. I just keep them in my mouth until they dissolve down to creamy wonderness!

I had sashimi as soon as I was allowed fish on my diet progression (week 3 for me was when I was allowed to incorporate tuna, salmon, etc.) I had tuna carpaccio (thinly sliced raw tuna) that I ate with some avocado and a touch of soy sauce. Im 2 years post VSG (4 weeks post revision to RNY because of GERD) and I had sushi with rice for the first time about a month before my revision surgery. I was in a "what the hell" kind of mood and had gone off the rails a bit. I had pieces of a few rolls and it sat fine . . . made me a bit full, but we sat for a long time. If I wasn't scheduled for my surgery, I would not have had the rice. The fish is the best part of sushi anyway!
Edited to add cheese: I ate cheese as soon as I got to the soft food stage (cheddar, babybel, laughing cow) all went down well. They are easy to chew to a liquid consistency. Everyone else is right though, cheese is calorie dense 50cal for a babybel light or 70 for a regular; string cheese is 80 cal for regular; a slice of cheddar is 50-80 depending on the thickness. I eat cheese all the time but am very judicious and make sure it fits in my daily macros.
