What's On Your Monday Menu, RNYers?
Good morning! I hope that everyone had a good Mother's Day. I spent my morning at Disneyland running a half marathon, then made it home to have dinner with mom. The run was good, not my fastest, but good. I was too much in my head at the beginning and had to work through a bunch of negative thoughts to even finish, so I view it as a win. I ended the run with fresh, hot beignets. I could definitely have made a better choice, but they were delish. Back on plan today.
B: 2 eggs, 1 oz cheese, tbs pesto
L: Chicken breast and zucchini in a dijon mustard sauce (leftover from dinner)
D: New York strip, asian slaw
S: Light and fit, latte
Totals: Unknown because I haven't entered into MFP, but I'll edit to add later.

Hello everyone. I have been so busy with my new job that I have not had a lot of computer time. Any new job requires learning and adjustment. Been a nurse about 25 years and digging back into my mental archives is really tiring and interesting all the same. Some days I come home frustrated and ready to cry others with a DING DING light bulb over my head. Patients bring in cookies and treats, most of time time I really am not tempted but the other day I shoved a couple oatmeal raisin cookies in my pie hole which ended up coming out my butt hole!!! NEVER AGAIN!!
Weight is stable. I could be 20 lbs lighter but really am thinking that I am happy where I am. Its the weight I was in high school. Much smaller clothes so I am trying AT THE MOMENT to maintain.
Miss reading this thread. Miss all of you!!

My weekend was good. Busy running the teenagers everywhere for their various performances and rehearsals and work. Late night Sat volunteering at a fund raiser for Aids Services Austin. Had a wonderful time but was exhausted come Sunday morning. Hubby and the teens took me out for a steak Sunday evening and I did a bunch of laundry.
Did some menu planning related cooking. Seems to be really working well so far. I made a big batch of the Crock Pot Low Carb Cabbage Beef soup from sugarfreemom.com and baked several sweet potatoes. I pulled the skins off the sweet potatoes and packed them into 1 cup containers for lunch at work. I don't know about you all but I have fallen in love with sweet potatoes with nothing but a bit of salt. They are so tasty without all the sugar, butter, and cinnamon I formerly smothered them in. Good stuff!
