Trying a new lasagna

Today I was craving lasagna, but trying something inventive without noodles.  For the noodle layers i oven roasted asparagus, thinly sliced zucchini and eggplant. I put in a layer of fresh spinach right by the ricotta cheese layer.  My sauce had hidden bell peppers, onions, garlic, and portobello mushrooms very finely diced and fried with hamburger.  I am so hoping it will work out.  I may only eat a couple tablespoons, but I want them to be tasty!

I did this last week using thinly sliced zucchini as the noodles and ground turkey instead of ground beef. It was amazing.  I always do homemade sauce to help cut down on added sugar.

Sounds awesome ! Everytime I take a lot of time, work at something, when it's done I can only eat a bite or two and then get mad. It's a cycle

I totally understand.  Now when I eat, as soon as I get full I put my plate on the floor for my dogs.  Then I walk away.  No regret when the dogs are chomping away at it.  Then I don't have the temptation to keep eating.

another option is to use spaghetti squash.  Cook it as directed...then after you scrape it out of the shell, dry it out as well as you can and then add a beaten egg and maybe a little bit of cheese if you like...like a quarter cup..mix it well and then use it as your pasta layer
