Kale Chips?
Kale chips wouldn't stand up to hummus. I think they only taste good straight from the oven. Some people like using pork rinds for the 'chip' factor. I've never eaten pork rinds before surgery, but bought some microwave ones, so I can microwave just what I want, rather than having a bag sitting around. Didn't really care for the bag ones anyway.
As others said, once you are far enough out veggies work. I am going to say also, even though I love hummus...early out it is not really a good protein source. Not a lot of protein, and it has carbs... you have limited real estate you are working with. Dense protein is the way to go.

The pork rind idea sounds pretty good too. I don't actually plan to eat anything until it's cleared, but I am a planner what can I say. Lol! Thanks!
If you make Kale chips some salt and pepper and they are pretty great. I've never liked the ones I've bought, they tend to add too much too them like cheese or something crazy. Kale chips are hardly ever stiff, mostly they are so frail they melt in your mouth if they get there :-)
If you want to make Kale chips they are easy and taste best right away. But they'd never help with hummus unless it was sprinkled on as topping.
