The trick with the grill is high heat and speed. Season your meat and let it rest while you heat up the grill. When hot, flop the meat onto the hot grill (gently if it ground or assembled meat). Count to 60. Turn it over. Count to 60 again and remove. That's super rare. Add one minute or a count of 60 to each degree of doneness. Let the meat lay on the plate untouched for about 10 minutes so the juices stop running. If you cut it over too soon, they will all run out and you will have dry meat.

With practice and some small record keeping, you will figure out best practices for you and your grill.

Remember, if it's not done enough for your liking, you can also put it back on the grill and go a little longer. Can't back it up if it's overdone.

Now, chicken parts or other poultry parts, I will parboil first or go low and slow (up to 30 minutes) on the grill.

I'm picturing this as a children's book. A cautionary tale. "See Kathy. See Kathy cook meat. See the smoke. Bad Kathy. Bad Bad Kathy."

I have said a prayer for your burnt offering, now go to the Light little sirloin

Oh Kathy... where do we begin....

I have had those costco burgers, they don't take a lot of time.  Everyone is different and has their own way of grilling but for a burger like that I would do indirect heat, meaning on your grill don't but the burger right above where you see a flame, that' what's going to char it like that, the flames.  I also am big on "not touching it" so once it goes on the grill I close the lid and set my timer on my iPhone and leave it, timer goes off, I open the grill, flip and close the lid and set timer.  I do have to pat myself on the back, I am an awesome griller, years of practice, my Dad taught me when I was like 15, and my Dad is an awesome griller.  You know if you can't get the hang of a bbq, why not use an indoor grill, like the George Forman kind of thing.  Just an idea.  You tube grilling different kinds of meat, that should help.  Also next OH conference can get have a guest speaker, Grim and have a "session" on grilling meat, just saying it would be sold out! LOL LOL

Stop killing what has already been killed, hasn't it suffered enough LOL LOL KIDDING!!!!!!!!

I love all the comments here, like a friggin Seinfeld episode, and I LOVE SEINFELD!!
