I'm not even sure where I got it at this point, I printed it off and it's in our regular recipe rotation! Here you go:

Ingredients:

The yield of one small to medium spaghetti squash

4-6 ounce of lobster or crab meat - (I use either or and sometimes I use the fake stuff) Also to make this into a full size recipe for DH and I we use 24 ounces

half a lemon

2 TBS butter

2 TBS low carb baking mix (I just use flour)

1.5 Cups milk (I use skim)

3 cups shredded cheese - whatever kind you'd like, we use cheddar

8 slices of cooked turkey bacon

Directions:

Preheat your oven to 350 degrees

Cook your squash until it is tender enough to be pierced with a fork, scrape out the squash.

In a pan over medium heat, melt the butter and then whisk in your flour or baking mix until fully incorporated into the butter. Add milk and allow it to come to a slow boil. Whisk so that the flour doesn't stick to the bottom of the pan.

Add 2 cups of cheese and keep whisking. Drop the heat to medium low. Your cheese will become gritty, but eventually it should get smoother. Be sure to whisk as you go so that the cheese sauce does not burn or stick to the pan. Once cheese sauce is finished empty it into the bowl of spaghetti squash and stir well.

Add the lobster or crab, crumble the bacon and add and stir again.

Transfer to a casserole dish and top with remaining cheese. Bake at 350 for 30 minutes

Happy Friday!  Well I survived meat week! (which was converted to critter week last night when I caved and had a yogurt before the gym)  I must say, it was very enlightening, and harder than I imagined.  I learned a few things.  First, I was not hungry at all.  The dense protein kept me very full.  Second, even though I basically follow a critter diet, I realized I do like the option of adding variety to my meals, a piece of onion, an asparagus stalk or a bell pepper makes me happy.  I don't think I need a lot of variety, or something at every meal, but I do like the change in texture at a veg provides.  However, I did lose almost 4 lbs.  It taught me that my body is still very carb sensitive . . . that even though I keep my carbs reasonably low (under 50g most days), my body reacts better under 30g.  I learned that I could do all critter every so often to change it up and keep my body on its toes.  Thanks to all who participated in meat week and for everyone's support!  

Here's my plan:

B: Ground turkey and pesto

L: Lemon Chicken (although my Dr. Appt. was changed from 2:15 to 12:30ish, so that kinda throws a wrench in my lunch plans.

D: No idea . . . meeting a friend, but to finish the week out, it will be meat or critter centric . . . I'm thinking maybe a bunless turkey burger

S: Ham

Totals:  totally unknown . . . will update when my plans are more solidified . . .  I hate days like this . . . makes me feel totally out of control

Great photo Grim and J!  Reminds me of my husband and I, he was 6'4 and I am 5'4.

My reflection on meat week - I didn't lose 1 pound and was hoping to get out of the 150's.  I did notice you are NOT hungry.  Going back to low carb as I was eating before and need to move more.  Low carb high protein works for me with losing and then complex carbs, high protein for maintenance.  BTW, I did notice major backup.  If I were to do this again will take something to assist the "movement".

L - Corn beef

Wasn't hungry LOL

I love that photo!  I can't read all the posts until probably tonight.  But I do want to post.

First, what have I learned about my diet?

1.  That I had let a lot more carbs into my diet than I realized.

2.  That I was craving carbs more than I realized.

3.  That my Crio Bru (like coffee, but made with roasted cocoa beans) is a kind of transfer thing for carb cravings.  I am out of it today and going CRAZY.

4.  That my weight will still move down the scale, but I really do have to work HARDER at it, MUCH HARDER. 

My menu today:

B: Egg with ham dices and cheddar

S:  Parmesan Cheese

L: Shrimp and ****tail sauce

D: Out with husband and parents.  I hope to choose a steak!

Today I am drinking Green Roobios Tea (Republic of Tea) and Herbal Chai Tea (Teavana)

I went for a 30 min walk with my dog this morning.

Meat/All critter week has been a success for me, I've lost 3.5 lbs since Monday morning!   I didn't find it too difficult, but I did all critter so I had eggs, cheese and yogurt too.   I was going to do fish, but never got around to it.

Had my "me" day today, got a few things done around the house this morning, had a massage then went shopping, bought a couple of new summery tops and a new pair of slacks, then came home and enjoyed a couple of hours of solitude with a good book before making dinner for the family.

 

B:  2 Eggs

L:   4 oz chicken w/ bbq sauce

S:  Babybel

D:  Turkey meatloaf, cottage cheese
