OH OH!
I made festive deviled eggs for myself and the teenagers using different colored food coloring gels in the yolk/ mayo mixture. After trying different colors for seasoning taste I thought it tasted off. I looked at the ingredients in the food coloring and cornstarch and dextrose was listed. I was horrified! I was trying to finish the eggs fast in case I dumped. My family was trying to talk me down from the ledge. All the while I was sipping on a cup of coffee. When I realized I was drinking liquid right after I almost lost it completely. I do not feel so good and I am really tired but I think it is because I got so freaked out. Three hours have gone by and I have not thrown up, broke in a cold sweat or passed out so I think I have survived. LOL!

I am surprised at this -- I find fats to be my friend. They are satiating and good for weight loss. In fact, I use full fat everything -- for me it is definitely the sugar (corn starch and dextrose) that would cause me to worry.

There is a small percentage of people that fats cause gastric distress, but it is NOT dumping. But I find, like you, that fats are very satiating, as lots of recent scientific studies have shown. And if you end up eating less in the course of a day by eating a little extra fat, it is a great tradeoff.
Plus, fat is delicious.

I was shocked when my bariatric endocrinologist at the Cleveland Clinic advised me to eat fatty meats, full fat dairy, etc. -- but he was so right. I mean, I am not downing cups of bacon fat -- but I certainly don't limit myself, either. Of course, you're talking to a woman who makes her own butter once a week!

Making butter is on my list. Maybe I'll make my own churn, and go old school.

Or you could do it the lazy way -- use your Kitchen Aid mixer. That's my method of choice. Of course, I've got a 10 year old red head who is very clear about his preference for "mama butter" -- so it's hard to keep up without taking the Amish out of the process!

Something appeals to me about a real churn. But then, I used to have an ice cream maker that had to be cranked by hand. If I'm going to churn, I need a pretty floral bonnet.

I don't worry about fats in my diet and don't eat low fat anything. I still malabsorb fats very efficiently, The only thing I limit in my diet are white and processed carbs and aside from some chronic autoimmune diseases, which are well controlled, I am sickeningly healthy with great lab values - even my new PCP was shocked at how awesome my levels all are!
