Dumped for the first time
I do not want to dissuade you from resetting to liquids, because I'm all for that if you feel you need it. but I do want to point out that you are 3 weeks post op, and that being stalled at three weeks is actually very, very, very common. Almost everyone who has had the surgery gets a stall very early on.
You are doing great! Protein forward all the way.
I was allowed to eat salads at 6 weeks, it didn't agree with me until I was at least 3 months out. You are still early out, so take it slow....

Reading your description of Dumping, I shuddered. Thankfully, I haven't dumped yet. I say yet because I am just like everyone else. I am Human and fallible.
What really gets me is All these other posters that can have salad. I am jealous lol. We (those with MY doctor/ nutritionist) are not allowed lettuce the rest of our lives as we were told lettuce can be a stomach stretcher (gas and all) . I LOVE Salads so mine have to be made with spinach and the like.
