What's on your Saturday Menu, RNYers?
It's been a rough week with our community being hit by devastating tornados. So very unusual for Virginia. Thankfully no lives lost locally, but 15 homes completely gone, many people still hospitalized with severe injuries, 30 other structures heavily damaged. The community has been just outstanding with an outpouring of support and help for everyone affected.
I've been feeling a little tired, so have added sublingual B-12 to my vitamin routine which seems to be helping a lot.
B: scrambled egg - hubby also cooked me a sausage patty, but the egg filled me up, so the dog got a treat.
S: 1 ounce of fresh mozzarella cheese. When my friend's cow comes back in milk, I plan to make some from scratch.
L: 1/4 cup of canned tuna mashed with avocado.
S: Protein shake
D: 2 oz rotisserie chicken and a couple of tablespoons of roasted beet root with butter.
S: If hungry tonight, will eat a teaspoon of natural, sugar free peanut butter or three or four roasted almonds.
I started a fresh batch of yogurt today. I like to strain it so it has the consistency of cream cheese. I have company coming in next weekend and will make some sort of veggie dip out of it.
