Enjoy the conference.  But can't wait to see your Zion National Park pics, wow that is a dream come true for me.

Headcolds seem to be everywhere right now - I was laid low with one last week and didn't even try to plan my food. Happy to be over it now and ready to return to daily posting!

Food:

B: quick steel cut oats with added protein

L: chicken breast

D: roasted pork tenderloin with Dijon mustard

S1: yellow bell pepper; S2: frozen mixed berries

Cal-898, protein-92, fibre-31

Good Morning AV and The Team! 

Gosh, can I JUST say I've really missed ALL of you. My first week went wonderful.  I leave home very early in the a.m. with the traffic my drive time is 45 mins to 1 hour - mot to mention a guaranteed 1hr ride home. But who's complaining?  I'm certainly not!

As it turns out, everyone is a fitness buff and workouts everyday, drinking at least a gallon of water! No exaggeration! * you  know my challenges there.

I pack my lunch everyday so I'm trending/doing well. I think I loss weight last week - didn't get on scale but will in the a.m.

Right now I'm eating my Chobani Mango yogurt. For snacks later a Ready,  Snack & Go (Roasted Turkey w/hotspot pepper.  Dinner tonight : baked chicken.

I'll log on at home tonight.  Right now I'm on my phone.

MISSING you Ladies :-)

Awesome that the new job is going well.  I can't imagine having that long of a commute each day, that would make me sad. Mine is about an hour each day with normal traffic.

Good Monday Morning (blech).  It was sunny and warm here all weekend.  Too bad my mood did not match the weather.  I don't know what is wrong with me, but I NEED to shake the mood I'm in.  I don't like it.  This weekend was not great foodwise for me.  For some reason, after my run and circuit class on Saturday, I was hungry all day.  Seriously, ALL DAY.  For the first time in a long time, I couldn't stay under my calorie "goal" and topped out at 1,318.  Yesterday was no better.  While my calories were under goal, my macros were way off . . . I think.  I had lunch with my brother and mother at a restaurant that specializes in sandwiches and salads.  I picked a WLS friendly salad, but there was no way there was more than 1.5 oz of chicken on that sucker.  So, over the lunch, I ended up polishing off a good portion of the salad, which although satisfying in the moment, left me hungry an hour and a half later.  I would have been better off with one of the sandwiches and ditching the bread.  Also, it was interesting.  My mother, who knows the specifics of my post surgery life made a comment that I "did a good job" with the salad since I ate a majority of it (for the record, it was not a large salad) and she meant it as a compliment.  I had to remind her that I am no longer a member of the"clean your plate" club, and that it was not a plus that I ate an entire salad for lunch.  The salad may or may not have been followed by a cookie after dinner.  Oy.  Actually glad that today is Monday as I seem to have better control during the week.

Here's my plan:

B: Leftover chicken thigh meat

L: leftover beef and zucchini lasagna (ground beef, tomatoes, zucchini circles and some mozzarella cheese)

D: New York Strip and asian slaw

S: ham and provalone (2 oz ham, 1 oz provalone) and Light and Fit (no peanut butter )

TOTALS: Cal: 926; Protein: 100g; Fat: 42g; carbs: 23g

Your beef and zucchini lasagna sounds like a great idea! I wonder how cutting the zucchini length wise like lasagna noodles would work? Thanks for sharing!
